BE TENACIOUS!
Meaning do NOT easily get discouraged.  Do NOT give up on your goals! Persist in your actions  towards the life you want. A tenacious life is one that is well lived. How many times have you set goals but stopped short of taking action? Instead of the regular order...READY. AIM. and then never fire:(  Switch it around to live your life in this order...READY. FIRE. AIM!

Last year around this time I took a leap of faith and decided I should hold a race around Winter Park to raise money benefiting Canine Companions For Independence ..I tend to  get excited, jump and do things without much thought... ...not quite sure how I was going to get sponsors?,  Where I was going to go in Winter Park? Who I had to ask if this was legal? No volunteers and did not even check with my team..just picked a date ( six weeks away) and called a friend from CCI to see if they would be interested in helping me out...I believe if I would have taken to much time to AIM I would not have pulled the trigger. I set my intentions and could not turn back.. As you may know we raised $6000 and had a blast doing it!

Recipe of the Month:
Coconut Macaroons

What You Need
Ingredients
3 cups sweetened, shredded coconut
4 large egg whites
1/2 cup sugar
1 teaspoon vanilla or almond extract (see Additional Notes)
1/4 teaspoon salt
Instructions
1) Preheat the oven to 350°F. Place an oven rack in the bottom third of the oven and preheat to 350°F. Gather all your ingredients and equipment.
2) Toast the coconut (optional). For deeper coconut flavor and extra-crispy macaroons, spread the coconut on the baking sheet and toast for about 5 minutes, or until just barely starting to show some color. Let cool slightly before using.
3) Whisk the egg whites, sugar, vanilla, and salt. Combine the egg whites, sugar, vanilla, and salt in a mixing bowl. Whisk until the whites and sugar are completely combined and the mixture is frothy.
4) Combine the coconut and egg white mixture. Pour the coconut over the egg white mixture and stir until the coconut is evenly moistened.
5) Shape the macaroons. Line the baking sheet with a silpat or parchment. With wet hands to prevent sticking, shape the coconut mixture into small balls about 1 1/2-inches in diameter. Space them an inch or so apart on the baking sheet.
6) Bake the macaroons for 15-20 minutes. Bake the macaroons until golden, 15-20 minutes.
7) Cool the macaroons. Let the macaroons cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. Macaroons can be kept in an airtight container for up to a week

Power Performer of the Month:
Sharon Miller

I  have been working out at 32789 for 24 yrs this March. I  started training with Judi and when Nicole was born her schedule changed and I  have trained with Diane ever since. They are like family.  They individualize workouts to suit the client. Both Diane and Judi keep abreast of all that is happening in the world of fitness and health. I like the "personal"  touch. You don't get that other places! I  do pilates along with other strength and core work.  I  do miss the leg press machine.... Was my favorite!

I enjoy the  online challenges very much. I  started with a 14 day Challenge and just completed a 21 day Challenge. It is an added bonus. I  have really taken a look at my eating,  mindset,  and what I  want from the challenge.  I was thrilled to have lost 1 1/2 inches from my waste. The shakes really work  (I  was a bit leary at first). I  am a chocolate girl and my daily chocolate shake is really good and handles that chocolate craving.  I  am energized after drinking my am shake. You can be creative with the shakes as well. Group support is essential with the challenges and I  look forward to reading everyone's daily posts in addition to sharing tasty healthy recipes.
I  thank Diane and Judi for making healthy living so much fun!!

I have been retired almost 2 years and I so enjoy it. I  love traveling and along with my boyfriend plan to travel as much as possible. I  enjoy hiking, biking and cooking.  I  have had a long-term love affair with Food Network.

Congratulations Sharon! You are our April Power Performer!

We hope everyone has an amazing April and make sure you hit all of your goals for this month!
