With the winter months upon us, the founders of EPT Racing (Epoch Universal & Performance Therapy) in conjunction with HIT Endurance Coaching have created an environment where cyclist of all levels can participate in a coach led cycling trainer class.  Performance Therapy has provided their training facilities for the morning, evening and weekend classes, while Epoch Universal has provided the audio/video components and integration of the wireless WASP technology and PerfPro software.  HIT Endurance Coaching has built the progressive workouts and will provide the coaching at all of the classes. Through the winter months, HIT Endurance Coaching will lead the "Power Palooza Series" which will focus on Functional Threshold Power and Neuromuscular Power for riders of all levels and abilities.  Visit our website below for class schedules and details about the cycling trainer classes.

Bone broth is a true super food filled with easily digestible minerals, amino acids, joint aiding nutrients and much more.  It's a staple in the Danenberg household so learn why it should be in YOURS.
 
Check out this article in Eat Naked Now, a blog which features simple unprocessed foods and some grains.  Recipes are labeled as Paleo or GAPS friendly as needed.  While the nutrition information in the article is excellent, please note that Mike prefers his recipe below which uses bones from grass fed /grass finished beef.   Grass fed/ grass finished beef bones provide a healthier fat and nutrition level in the marrow verses grain fed beef.  

Mike and Heather's Bone Broth

  • 3 -5 Lbs bones (beef bones, marrow bone, or chicken) preferably from grass fed cows
  • 1/2 cup raw apple cider vinegar
  • 4 carrots
  • 4 celery stalks 
  • 1 small onion (optional)
  • 1 small bunch parsley (optional)
  • salt to taste

Break out your crock pot, and place bones in the bottom. Add your raw apple cider vinegar, and enough water to cover bones. Turn crock pot to low and allow to sit for about an hour. This will allow the apple cider to leech more minerals from the bones.  After an hour, add the carrots, celery, and if you want the onion. If onions are not your thing, you can certainly leave it out of the recipe. Then fill the crockpot up to its capacity and cook for approximately 24 hours. If you go a little longer or less, that's okay. For the last 10 minutes , add the parsley (if you are using it) and let it simmer, then remove parsley. You may also add some salt at this time.  Turn off the crock pot and allow to cool. Your broth will be HOT. Then, strain, and pour into jars to store your broth. Once cool, you can store in the refrigerator for up to 5 - 7 days. A few things to note, if you have not had bone broth before, it's thick, not thin like a typical broth. It will have a thick, hearty sweetness to it. Also, when you take it from the fridge, it will have a layer of fat hardened on top, and the broth itself will be gelatinous. Don't skim off the fat as it contains many of the health benefits.  When you warm the broth over the stove top (never microwave) it will turn back to it's soup-like state. Drink about a cup or so a day, and if you like, add some to your dogs food. In the Danenberg house, our 3 fur babies love it cold, right on top of their food.  To your health!
