Welcome to Muddy Dog Roasting Company!
Good Morning from your local roaster!

La Cascada Hacienda, which translates to "The Waterfall Estate", is located in the heart of the Alta Verapaz region of Guatemala. They grow coffee now recognized as one of the finest in both Guatemala and Central America.

It has strong chocolate notes, a bright and fine acidity with orange and lemon notes. It offers an exquisite roundness and pleasant mouth feel, with hints of cinnamon graham crackers.

Mexico Chiapas Fair Trade, Organic

Good body.  Coffee flower-honey sweetness.  Flavors of stone fruits - peach, apricot.

One of our relationship coffees purchased
after Jim's 2012 trip to Chiapas.  From the
FIECH co-operative, a second-level co-op
of 15 co-ops representing around 25,000
farmers.  FIECH has been selling organic
and Fair Trade coffee since 1996.

Happy Thursday!

As you can see above, an article was written, in our local newspaper, about Muddy Dog Roasting Company.  We would like to thank the editor for reaching out and educating customers about our company.

Here's a quick expansion update:  Debbie talked on the phone to the Fire Marshall earlier this week.  There is debate over what type of fire wall we need in the new space, since we were considering moving the roaster over to it.  After careful consideration, we are thinking about leaving the roaster in the existing space and moving the retail shop plus building the coffee shop in the new space.  Along with our architect, we have a face to face meeting this morning to finish discussing the up-fit.  Hopefully, after this meeting, there will not be any further delays in respect to receiving our permits.  Keeping our fingers (and toes) crossed!

Here's a brief teaser:  Later this summer, we are planning a trip to Panama.  To keep a long story short, one of our daughters will have an internship there over the summer.  It's been a few years since we have visited any coffee farms and found this would be the perfect opportunity to meet new farmers in a new country.  Look for Panama coffee on our menu later in the year.  More details to come in the following months...

Have a wonderful week!
Debbie and Jim
