Countryside Garden Tasting - Monday, Oct. 12
On Monday we will be tasting the fruits of our labor.  Students will sample Salsa Verde, which is being made from ingredients grown in our garden this year.  Salsa samples (with a few tortilla chips) will be available to students as they come through the lunchroom.  Students loved this recipe last year - check it out and help make it at home!

Salsa Verde: (from the Food Network)
8 ounces (5-6 medium) tomatillos, husked and rinsed.
Fresh hot green chiles, to taste (roughly 2 serrano peppers or 1 jalapeƱo).  Stemmed (and seeded if you want it milder)
5-6 sprigs of fresh cilantro (thick stems removed), to taste
1/2 a small white onion (about 1/4 cup), finely chopped
Salt
1/4 cup water
Juice of one lime (fresh)

Raw version (this was tasted at school):
Cut tomatillos in half (or for bigger ones, in quarters) and add all ingredients (except lime juice) to a blender.  Blend to a coarse puree.  Scrape down the blender sides and add to a serving bowl.  Mix in lime juice and salt to taste.  Serve with chips.  Refrigerate leftovers.  (for those who like onion pieces, hold back at least 1/2 the cut onion from the blender and stir in with the lime juice).

Roasted version:

Preheat the broiler.  Cut tomatillos and chiles in half (chiles lengthwise).  Place them on a jelly roll pan covering with foil.  Roast the tomatillos and chiles on a baking sheet 4 inches below a very hot broiler until darkly roasted, even blackened in spots (about 5 minutes).  Flip them over and roast the other side 4-5 minutes - so the tomatillos and chiles look splotchy-black and blistered.
Combine the tomatillos and chiles, including the juice that have run off during the broiling, in a blender.  Add the cilantro, onion and water.  Blend to a coarse puree.  Scrape down the blender sides and add to a serving bowl.  Mix in lime juice and salt to taste.  (for those who like onion pieces, hold back at least 1/2 the cut onion from the blender and stir in with the lime juice.)

Title 1 Family Night Invitation - Curriculum Overview
As you may know, Countryside receives Title 1 funding from the federal government, enabling us to hire two hourly teachers.  Our Title 1 teachers are Nancy Hansen and Liz Denn.  They work with students in kindergarten through fifth grade in math and reading.  You and your children are cordially invited to learn more about our literacy and mathematics programs, as well as how Title 1 works.  Please join us on Tuesday, October 27 from 6:00-7:00 PM on the third floor of the community center, room 350.  You will have the opportunity to meet our district literacy coordinator, Caroline Linden, as well as our Title 1 teachers.  Since Creek Valley and Cornelia are also Title 1 schools, they too, are invited.  Childcare will be available for school-aged children.  A light meal will be served.
  • For planning purposes, please click on the link below and complete the form if you plan to attend.

Enjoy the beautiful weather this weekend!

Region of the Month

In other news, I am doing a new feature this year called "Region of the Month." You might have heard your students talking about it or wanting to watch some of the videos on my webpage. All regions were suggested by students and I welcome student and parent help in finding quality music performances that feature instruments or performers that represent the region whether it is traditional, classical, folk or pop.

This month's region is India. I have already gotten some great examples of Bollywood music; in fact, I have more than I can use. I will post the extras on my webpage if I think they are appropriate for all audiences because I share them with grades 2-5.

Next month's region will be Australia/New Zealand (including Maori and Aboriginal music) and December will be Norway/Sweden/Finland. If you have any suggested instruments, performers or songs, please send them my way at: [email protected]

Thanks,

Shandra Prowell

Should my Child Stay Home from School?
Parents and students frequently have questions about when it is appropriate to stay home from school because of illness. Please follow these guidelines:
  • If your child has had a temperature of 100.0 degrees or higher in the past 24 hours.
  • If your child has vomited within the past 24 hours.
  • If having your child at school would significantly put others at risk for contracting your child's illness.
  • If your child feels ill enough that he/she would not be able to benefit from being at school.
Please contact the health office if you have questions

Edina PCN Presents:   GIST
The Essence of Raising Life-Ready Kids

In GIST The Essence of Raising Life-Ready Kids, psychologist Michael Anderson and pediatrician Tim Johanson take parenting into a new paradigm. Raising children has never been more challenging as parents feel the stress ofwatching their children grow up not ready for life in the adultworld.

GIST will give new and valuable insight into the process of how kids mature through their experiences of life, what the authors call a "checklist to adulthood." You will be given new ways of thinkingabout:
  • *   learning and anti-learning
  • *   self-esteem
  • *   minimizing shame
  • *   understanding self-protective behavior
  • *   over-talking to your kids
  • *   the importance of truth-telling
The authors bring much to the table by way of experience, both professionally with their patients and as dads who have navigated the parenting  journey.
Michael is a licensed psychologist who has spent 30 years studying the way kids grow up. Tim, a pediatrician with over 25 years in practice, has a proven track record of being deeply committed to the cause of children's health.   CEU credits available for$20
