Welcome to Muddy Dog Roasting Company_

The Unión de Cooperativas de Servicios Múltiples (UCOSEMUN) was founded in 1998 in Nueva Segovia, Nicaragua by eight cooperatives with the purpose of improving the lives of small coffee farmers. Coffee is their largest export, but many of the cooperatives also produce corn, beans and cattle for the national market. Since its inception, the cooperative has strived to increase their access to international markets, but producers were having difficulty exporting directly and were not receiving a fair price for their quality coffee. In 2008, UCOSEMUN decided to pursue Fair Trade certification and the cooperative has greatly benefited from Fair Trade's direct link to international markets.

Cupping Notes:
Sweet nutty flavor, sweet citric acidity, and a silky body.

Indonesia Java Kayumas

BRAND NEW!!

Indonesia Java Kayumas comes from one of the four major estates in Java, the Kayumas Estate. Built in 1900, this farm has had a long and rich history of producing some of the best coffee in Indonesia. It is currently 725 hectares large, which yields approximately 350 tons of high quality coffee per year. The main harvest period lasts from May-July and will continue through September. This coffee is carefully hand-picked and goes through a washed process before it reaches the sun drying racks.
Cupping Notes:
Nutty, malty, chocolate, bright, sweet, effervescent.

Happy Thursday!

Wow!  What a difference a week makes.  Last week, we were bombarded with ice and snow.  Tuesday was Groundhog Day and neither Punxsutawney Phil nor Sir Walter Wally saw their shadows.  You know what that means!  Early Spring! Whoopie! ;-)   It certainly feels like spring here in NC.  And I'm happy to report that all the snow and ice have melted.  Business as usual back at the roastery.

With a little bit of down time, we were able to sort through some of the coffee that arrived a couple of weeks ago.  We came across not one, but two brand new coffees.  Don't get me wrong; we've had Nicaraguas and Javas in the past, but nothing like the two new ones we got in.  They both have sweet and nutty undertones.  With the Nicaragua having a silky body the Java is different with its bright effervescence.  Hmmm...which. one. should. we. try???

Have a wonderful week!
Debbie and Jim
