For the Daring Cooks Out There:

Agretti pairs beautifully
with olive oil and lemon.
Organic Agretti, Blooming Glen Farm ... $5.99 per quarter pound This specialty Italian heirloom herb/succulent is all the rage with chefs and once your try it, you'll see why! Pleasantly tart, salty, refreshing and crunchy. Enjoy fresh mixed into green salads or cooked into either Mediterranean cuisine or Japanese sushi creations. Some inspiration: combine agretti into pasta dishes, seafood fare (especially clams or crab), baked into a quiche, or as a spinach alternative in raw toppings, salads, and sides.)

Organic Celtuce, Lancaster Farm Fresh ... $3.69 each (Asparagus lettuce? Celery leek? Celtuce, a thick delicious lettuce stalk originating from southern China--also known as Wo Sun--offers a unique combination of flavors, textures, and characteristics. When sliced into long strips and steamed, celtuce retains its form much like a noodle and begins to taste somewhere between cucumber and asparagus. Stir-fry this bad puppy along with any kind of meat, or throw it in a soup, or I daresay pickle this fellow in a soy sauce/rice vinegar brine. Though you may be reminded of bamboo in a Thai curry or late night summers in southern China, it's always best to begin with simplicity: combine as strips with garlic and ginger, saute with a cooking oil that has a high boiling point, and toss on a light coat of cracked pepper for presentation and zip.)

Organic Shiso, Lancaster Farm Fresh ... $1.99 per 2 oz (Did somebody say Shiso?? If you have yet to experience this wildly herbaceous, citrusy, minty, leafy gem, now is your chance. It will change your life. You can substitute this ingredient into most recipes that call for basil or mint. Boost the flavor profile of your japanese dishes or any fruit creations. Feel inspired: Pair shiso with mushrooms, ginger, and soy sauce. Fry the leaves in a tempura batter. Pickle shiso with cucumbers. Lovely in a soba noodle dish. Think spring rolls. Try infusing shiso into your mojito or cool tea beverage.)

Organic Tangerine Lace ... $5.99 per 1/4lb (beautiful flavor profile of mild citrus and pairs well with any citrus, apples, radishes, salad greens, as well as sea fare. Also a nice topping for an escarole soup. It will knock your socks to high heaven!)
