"B" Vegetables Get "A's"
Broccoli, Brussels Sprouts, Beets and  String Beans!! These fall veggies all start with "B", but they get "A's" for TASTE and have the "A's" of Health.
 
There are a lot of delicious things to do with these "B" fall veggies:
  • Great snacks by themselves: Try raw broccoli and green or yellow beans dipped in hummus or salsa. Broccoli stems peeled and cut into sticks are better than carrots!  SCRUMP-DELI-UMPTIOUS and a lot healthier than chips.
  • Roast up Brussels sprouts or beets in the oven. It's an easy way to get a whole new taste into your meals without extra fat or grease.
  • Slip any of these veggies into soups or stews for a richer taste. 
Looking for some good crunch and color in your stir-fry? Pair them up with fall root vegetables. Try Broccoli and Parsnips or Sautéed Vegetable Medley (see below).
 
And "A" for healthy? Antioxidants that build your immune system, Vitamin A for healthy skin and eyes. Sautéed Vegetable Medley

Ingredients: 
  • 4 Leeks, cleaned well & chopped
  • 2 carrots, grated
  • 2 parsnips, grated
  • 1 onion, sliced
  • 3 cloves garlic, finely chopped
  • 2 Tbsp parsley, finely chopped
  • 1 tsp thyme (or 1/2 Tsp dried), finely chopped
  • 1/2 Habanero pepper, chopped
  • 2 tsp olive oil 
Preparation:
  • Heat oil and add pepper, onion and garlic
  • Saute until vegetables are softened
  • Add leeks and saute for about 5 minutes until leeks are softened 
  • Add carrots and parsnips and cook for another 2 - 3 minutes
  • Add fresh herbs to taste

Cooking Tips
  • Use olive oil in stir fry & roasting veggies to cut down fat calories and get healthy fat you need      
  • Add chopped garlic to stir fry or roasted veggies for more flavor and extra health      
  • Add herbs the last five minutes of cooking for better flavor
