Squash: The New Spaghetti
Getting tired of the same boring pasta with canned tomato sauce? Try something new with ROASTED SPAGHETTI SQUASH!

If you've never tried the buttery veggie as a pasta, get ready for velvety strands of "spaghetti" without the starch overload. Spaghetti squash will satisfy your family's hunger just like pasta, but with 1/4 of the calories and a lot of fiber. Extra fiber means you'll feel fuller longer and you won't need to go looking for that late-night snack. It's also gluten-free.

Surprisingly easy to make: 
  • Cook the whole squash on a pan in an oven at 350 degrees for 45 minutes or until a fork goes into the skin easily.

  • Let it cool enough to handle. Cut in half, length-wise and remove the seeds.
  • With a fork make long strokes from the top to the bottom.  Out comes long silky strands of "spaghetti!"
This recipe is great for creative cooking! The flavors are up to you; serve it with a fresh and simple tomato sauce or a little bit of olive oil and Parmesan cheese. You can even add a few herbs. For a heartier, more festive meal, try Spaghetti Squash Enchilada (see below) or top it with your own enchilada sauce. Anything you would put on traditional pasta tastes even better on Spaghetti Squash.

Spaghetti Squash Enchilada Sauce
Recipe 

Ingredients: 
  • 1 cup chopped onion
  • 1 Tablespoon olive oil
  • 1 cup corn
  • 1 red pepper
  • 1-2 teaspoons chopped jalapeno
  • 1 cup cooked black beans
  • 1 Tablespoon chili powder
  • 1 Tablespoon cumin
  • 1 teaspoon salt 1 8oz can tomato sauce
  • ΒΌ cup of cilantro
Preparation:
  • Cook onion in olive oil. 
  • Add jalapeno, corn & pepper. 
  • Cook for 5 minutes. 
  • Add tomato sauce, beans, spices and salt. 
  • Bring to a simmer and turn off. 
  • Add cilantro.

Tips
  • Remove seeds carefully to avoid scooping out too much "spaghetti." 
  • Use a fork to prick the skin of the squash in a few places before roasting.
     
  • Use a fork to fluff out the "noodles" into long strands.
     
  • One squash serves two hungry adults.
