Little Hen is a farm-to-table restaurant located on Holly Springs, North Carolina.  In keeping with their approach to a fresh, seasonal menu, owners Dawn and Regan Stacher asked us to create a series of seasonal coffees that celebrate the best of the current crop, and the people who grow it.  In keeping with their approach to the menu, each season pairs with the flavors found in nature that time of year.

 
WINTER is a blend of outstanding relationship coffees.  These coffees are full of earth and berries, flavors that pair well with the foods of winter in North Carolina.

Happy Thursday! 

Well, Mother Nature had a little surprise for us last week.  Here, in NC we were hit by an ice storm followed by snow.  Everything was shut down for several days, including the Post Office.  For those of you who placed on online order during that time, thank you for your patience.  All of those packages have been shipped.
For all of our friends in the rest of the country, we hope you are able to dig out. 

With the roastery closed on Friday and Saturday, due to weather and on Monday due to Debbie taking her mother to chemotherapy, we have fallen a little behind.  A lot of roasted coffee is patiently waiting to be bagged.  We hope you can appreciate the setbacks of a small business and are willing to bear with us as we take a few extra days to catch up.  Your patience is greatly appreciated!

On another note, this is a great week to get your order in for our Pepper Cask-Aged Deep South Blend.  We already have an order for it, so Debbie will be roasting it today.  For those of you who don't know about our aged coffee, it is a complex process.  We age our green coffee beans in Tabasco  Barrels for a year or more.  The end result is big and brooding, full of earth, yet retains a pleasant, low acidity with a hint of pepper in the finish.  NOT SPICY.  The aging process is United States Patent Pending.  This one is a little more expensive due to the care it takes to age the beans, but it is worth it.  Go ahead and treat yourself!
