Travel without Leaving Home !
  Tired of slogging through these gray winter days? Try using your meals to create a chance of pace.  Think warm sunshine, people chatting on the streets and kids playing in shorts!  Imagine yourself in the Caribbean, or China or South Aficia!  A simple stir-fry, a bit of seasoning and your imagination can make you feel like you are there...without ever leaving home.
 
Stir-fry cooking is quick, easy & very healthy. PLUS it give you lots of room to be a creative cook
The basic recipe is just 1,2 and 1,2
  • 1 pound of chicken, beef, pork or tofu (protein) cut into thin strips or bite size cubes
  • 2 pounds of veggies you like: carrots, broccoli, peppers, peas, etc cut into bit size pieces
  • 1 Tablespoon flavoring like garlic, ginger or shallots
  • 2 Tablespoon of fresh or 2 teaspoon of dried herbs
To prepare:
  • Get Ready: Cut up all the ingredients and place them next to the stove in small bowls.  Heat a wok or frying pan to "screaming hot."
  • Start cooking: Carefully add 2 Tablespoon olive oil
  • Adding ingredients:
    • o   Add the meat or protein and brown on both sides.  Make sure chicken or pork is thoroughly cooked.  Remove meat and set aside
    • o   Add denser vegetables like carrots, peppers first and cook for about 2 minutes.  Keep stirring. Add the softer veggies, like onions.  Cook another 1 minute or two. If you want crisp, crunchy veggies cook for a minute.  For softer veggies cook longer.
    • o   Add the meat back into the pan
 
  • In goes the flavorings like garlic or ginger and cook for another minute
  • Now add the herbs and cook till you can smell them, about a minute or less.
  • Add the sauce you want and stir to coat everything.  That's it!  Delicious with rice.

Recipes:
  • For the taste of China:  Mix one Cup broth with 1 teaspoon of corn starch & add 2 Tablespoons of Low sodium soy sauce, 1 teaspoon of sugar and 1 teaspoon of rice wine vinegar.   Get your chopsticks ready!,
  • Feeling Caribbean: Add some pineapple, raisins, green pepper and garlic to your stir-fry.  Make a sauce of 1 cup broth mixed with 1 teaspoon corn starch, 1 teaspoon grated ginger root, 1 teaspoon rice wine vinegar, 1 1/2 tablespoon soy sauce
Going to South Africa: Try Chakalaka!!! Add some green peppers and tomatoes to your vegetables.  For a sauce, mix ΒΌ cup water with 1 teaspoon each of chili powder and curry.

TIPS:
  • Mix broth and corn starch together before you add to the stir-fry.  It keeps the sauce from lumping
  • Frozen veggies can be added without defrosting.  This keeps them from getting mushy.
  • Serve stir-fry with brown rice for a much healthier and tastier meal.  Brown rice adds a little more crunch and helps reduces the risk of Diabetes.
