Hey!!  How was your week? Mine was MUCH better than the previous! Finally feeling relaxed about the holidays. I also worked on breaking down all my goals for 2016 and am SUPER excited about the year to come!

I swam in a meet on Saturday and cut time off 2 events, stayed the same on 1, and added on the mile :( BOO!! But still had a blast and will do another one in January.

Other than that I am on DAY 59 of my bike streak, and am loving working with my  cycling coach. And on DAY 10 of my running streak!!

I am looking for sponsors for my 2016 season now! Currently I am doing 3 70.3 races, 1 Ironman, and several races in-between such as the Horestooth Half, Triple By-Pass, and the Horsetooth 10K Swim. Here are the details on the  SPONSORSHIP OPPORTUNITIES for your biz or cause.

EASY Vegan Meals...

Cauliflower Taco "Meat"
 
This past week I had leftover cauliflower "rice" from my raw Indian food I made. I didn't want it to go to waste so I decided to make it into ground "beef" for Taco Tuesday!! Who knows where I got the idea that it would work, but it did!!! Even my junk-food hubby approved! ALWAYS A BONUS!!!

INGREDIENTS:
Head of cauliflower
Olive oil
White or yellow onion
Garlic (I used 4 cloves but I love garlic so you may want to adjust)
Cumin
Sea Salt
Chili Powder
Black Pepper

DIRECTIONS:
1. Pulse small pieces of cauliflower in a food processor until it is small like rice, set aside
2. Sautee the onion and garlic (both diced) in olive oil for a couple minutes
3. Add the cauliflower and continue sauteeing on medium heat
4. Add spices to taste. I like things with a lot of spice so I put about a tbsp of cumin and chili powder and about a tsp of salt and pepper
5. Feel free to add additional spices or change the spices altogether to make the ground "meat" suitable for other types of meals (italian, etc)

STRENGTH!!

Each week I will feature a swim, bike, run, strength, core, or flexibility workout.

Squat Challenge
A squat is one of the best exercises to strengthen your lower body because it works pretty much all your muscles...at once...in a functional way! YAY!

In our I Heart Being Fit group we do a monthly fitness challenge. This month is a HOLIDAY SQUART CHALLENGE. 

If you are more advanced with strength training, feel free to join us in the middle of the month! If you are a beginner, start with Day 1 and work up to Day 31 on your own schedule. Either way, make sure your form looks like the pic above. 



My Most Relaxing Holiday Season Ever!!

I reached out to one of my support groups today and shared that I was getting anxious about the next 6 weeks that most people call "the holiday season".

In the past I have struggled with the following during the holiday season...
  • Over Eating
  • Under Sleeping
  • Over Spending
  • Under Working
  • Over Traveling
  • Under Alone-Timing
When I reached out to my peeps, I found they all had similar struggles, which leads me to believe there are MANY of us out there fighting the same battles.
