1. Visit the garden on Halloween Night between 5pm and 8pm.

Recipe of the Week:
Guajillo Vinegar Pickles
Created by Chef Chad White
Ingredients � Tablespoon pickling spice � Tablespoon whole mustard seed 2 Tablespoons salt 2 quarts water 1 quart vinegar 4 Tablespoons sugar 6 dried guajillo chiles 5 carrots, thinly sliced 2 red onions, thinly sliced 6 jalape�os, thinly sliced
Directions
Add all ingredients (except carrots, onions and jalape�os) to a pot and bring to a boil. Once boiling, pour over the carrots, onions, and jalape�os and let cool to room temperature. Once the mixture has cooled to room temperature, store in refrigerator up to 3 months.

What We're Up To

September:
Olivewood hosted 11 field trips from Olivewood Elementary School, Lincoln Acres School, San Ysidro Health Center, and Warren Walker Elementary School.
Meanwhile, adult students in our Cooking for Salud! program celebrated their graduation on 9/18. VIP guests included National City Mayor Ron Morrison, and Vice Mayor Luis Natividad.
Additional garden visitors included students from the Southwestern College Landscape & Nursery Technology department, families attending our first-ever FOOD and FARM Family Fun Day and educators participating in our Creating and Sustaining Your School Garden all-day training academy.
Olivewood also added five more interns to our roster in September, bringing the current total to eight. Welcome aboard Sara, Erick, Annie, Daisy, and Corey!

- 5th graders from National School District will start their final year at Olivewood! Students will learn about the greenhouse and winter gardening, plant seeds in trays (the resulting seedlings will be planted on their next visit), cook Happy Rice, and experience our brand-new recycling and resource use lesson.
- Olivewood will be designated a Live Well San Diego partner and celebrate International Food Day and Border Binational health week at the Happy Healthy Harvest on 10/25.
- Our Halloween Haunted Garden will provide a spooky, safe, and healthy Halloween experience to over 700 visitors!
- We will host: a follow-up Cooking for Salud! lesson, a Volunteer Orientation (10/8), and free Deep Yoga classes (Thurs @5).

Teacher's Toolbox: School Garden Training at Olivewood
2014-2015 Training Academies Sponsored by Jimbo's...Naturally!
During the past school year, 61 teachers, parent volunteers, administrators, and garden education professionals attended school garden Training Academies at Olivewood Gardens and Learning Center. Course participants represented thirty-one public schools from nine school districts, five private schools, and three non-profits. The resources, knowledge, and strategies provided to each group have the potential to influence up to 20,000 children.
A wide body of research supports the positive impact that gardens have on students' dietary choices, environmental awareness, and academic achievement. Many California schools have made a significant investment in the construction of school gardens. With new teachers and parents entering the school system every year, learning opportunities for educators and volunteers are essential to the effective use and sustainability of school gardens.
These day-long workshops fill a critical need for well-trained school garden educators who can deliver high quality garden-based experiential education to K-12 students. We are excited to offer these training academies again this year thanks to the support of Jimbo's Naturally!, through funds raised from the Customer Appreciation Sale on October 18th. Cooking for Salud!
Changing Lives through
Cooking and Friendship
Cooking for Salud! was designed by Chef Educator Kati Christensen as an intensive parent education program that empowers families to take charge of their home kitchens. This unique seven week series builds confidence and skills to help students prepare healthy meals at home. Participants learn side by side from guest chefs, nutrition experts, and each other as they share their knowledge about food, cooking, home gardening, and nutrition. Class sizes are limited to 15 participants, encouraging each group to bond and students to provide each other with the support necessary to make lasting changes in their homes and in the community. Thanks to our generous donors, we are able to offer the program free of charge for families who otherwise could not participate.
We are pleased to report that during the last year we graduated 28 Kitchenista/os from the Cooking for Salud! course. The impact of the program has been felt immediately. 100% of our Kitchenista/os, have reported that they have made changes in their cooking at home. Changes include: increased consumption of fruits and vegetables, decreased consumption of sugary drinks, and reduced dependence on pasta, meat, white rice, potatoes, and fried food to create meals. These strategies and others have given graduates the confidence to alter recipes and create their own healthy dishes for their families.
After graduating, Kitchenistas/os become part of a growing family of local health advocates based out of Olivewood Gardens and Learning Center. We now have nearly 60 Kitchenistas who are actively working to educate others and continue improving the health of the community. They participate in monthly meetings hosted by Olivewood Gardens, where they continue to learn about health-related topics, explore community resources, and plan relevant action-items to share information or advocate for change. The Kitchenista/os group is led by Olivewood superstar volunteer Patty Corona-Morales.
