Here is my list of items I will be making for Saturday April 25th for the Mecklenburg County Market. Please call me (704-533-0073 Beverly McLaughlin) or reply to this email with your orders if you would like me to save you a quiche, casserole, salad, or a quart of my products. (I always make extras of the items on the menu, however items do sell out so, it's best to reserve an order to guarantee it will be there.) If you do not receive an email confirmation by Friday afternoon that I received your order please call me.
My menu changes weekly, I have over 270 items in my line of products special orders are available with advance notice.  My products are vegetarian and vegan. I only cook with olive oil. I do not use processed foods, artificial coloring, artificial flavorings, or preservatives in my products, only whole foods. My products are prepared in a commercial kitchen. I am ServSafe Certified and my Health Department Inspection is 99. We recycle all paper, plastic, glass, and canned items and my packaging containers are now recyclable.

This is a fresh, zesty dressing my kids love!  Buttermilk, sour cream, Duke's mayonnaise, dehydrated onion.

Creamy Cilantro Lime Vinaigrette
This recipe was developed in a cooking class one night and the attendees said it was the best salad dressing they've had.  I hope you guys think the same. Greek yogurt, cilantro, fresh lime juice, olive oil, garlic, white wine vinegar. $6.95 / 8oz. Bottle (Vegetarian, Gluten Free)

Artichoke Dip

 Homemade Pimento Cheese   
This is my grandmother's recipe.  We love it!  We discovered the pimento cheese is excellent warmed up as a dip.  It's made with extra sharp cheddar, cream cheese, duke's mayonnaise and pimentos.  This is a spread or a dip and goes well with the soups.  Packaged in pint containers.

Apple Zucchini Muffins
Yummy breakfast muffins... Packaged 6 to a container. Apples, zucchini, flour, eggs, milk, flavoring and love. $7.95 (Vegetarian)

 Buttermilk Biscuits
This is the same biscuit recipe we put out over Christmas, Buttermilk biscuits are perfect for any time of the year. Packaged a dozen to a 9x11 casserole pan so you can reheat them for Sunday breakfast. $10  (Vegetarian)

Soups

Gazpacho is Back!!
Some of my customers tell me this soup makes a great Bloody Mary Mix.  I will have it every week this summer,  it's best served cold as an appetizer or main course. 
Fresh tomatoes, cucumbers, red peppers, green peppers, very little onions and garlic, a blend of tomato juices and a blend of vinegars.  $9 / Qt.    (Vegan and Gluten Free)


 

Creamy Herbed Cucumber Soup
Cucumbers, herb mixture (fresh dill, fresh cilantro, fresh basil, and lovage), cream mixture (cream, sour cream, and buttermilk), fresh squeezed lemon juice and lemon zest, sea salt and pepper.  This goes well with the quiche, tomato basil pie, and pimento cheese sandwiches.  $9 / Qt.   (Vegetarian and Gluten Free)


 

Garlicky Spinach, Garbanzo Bean and Tahini Soup
This combination of vegetables and seasonings is very unusual, but extremely tasty!  Fresh Organic Spinach, onions, garlic, garbanzo beans, tahini, potatoes, cumin, coriander and just a little bit of cream (1/8 cup to a quart of soup). $9 / Qt.  Serves 2 - 4  This goes well with the Casseroles, Pimento Cheese Sandwiches, or the Hummus.  (Vegetarian, Gluten Free)

Thai Butternut Squash Soup with Fresh Cilantro
Butternut squash, caramelized onions, garlic, coconut milk, vegetable stock, fresh cilantro and salt.  This soup goes well as a side with the Tofu,  Lentil Salad with Fruited Bulgar or Edamame Salad.  Serves 2 - 4 $9 / Qt.  (Vegan, Gluten Free)
 
Ash-e-joh (Persian Barley Soup)
This Persian Barley soup is a little more full featured than those in a Persian restaurant.  Onions, garbanzo beans, pearl barley, kidney beans, lentils, long grain rice, parsley, cilantro, scallions, fresh dill, fresh spinach, and lemon juice.  Like many Persian stews, it is positively stuffed full of greens and herbs, giving it a bright and lively flavor.  Serves 2 - 4  $9 / Qt.

Wild Rice Chowder
The combination of celery, celery root and wild rice is very beneficial, mushrooms are also considered an excellent partner for this grain.  Wild rice, onion, leeks, carrots, potato, celery, celery root, fennel, butter, cream, (very little) mushrooms, salt and pepper.  $9 / Qt    (Vegetarian, Gluten Free)

Spiced Red Lentil Soup (Yummy!!)

I love this soup, I could serve it everyday, it has become one of my favorites!  Red lentils, chopped tomatoes, garlic, serrano peppers, coconut milk, fresh cilantro, caramelized onions, olive oil, and spices. $9 / Qt.

Granny's Vegetable Soup 
This soup is obviously one of my Grandmother's recipes.  I make it like she did, just without the meat.  This soup is very thick, you can add your own beef stock or chicken to my recipe. Zucchini, squash, carrots, onions, celery, potatoes, navy beans, garbanzo beans, black-eyed peas, Lima beans, corn, sweet peas, cannelli beans, pasta, tomato sauce, vegetable stock, salt, pepper and spices. Serve with a fresh organic salad, Mac and Cheese Casserole, or Pimento Cheese Sandwiches.  $9.25 / Qt. Butternut Stuffed Shells (Entree)
This is just a simple twist on our regular stuffed shells.  WE have added roasted butternut squash to the filling. We stuff our shells with Butternut, Ricotta, Parmesan, and Mozzarella cheese, spinach,  garlic, spices and our yummy homemade marinara sauce. (Vegetarian)

Tomato Zucchini Casserole
This casserole is hearty enough to be a main course.  I think it is the most elegant of the casseroles I made.  Tomatoes, zucchini, caramelized onions, kalamata olives, Parmesan, Mozzarella, and Feta cheeses, fresh basil, salt and pepper. $11.95 (Vegetarian and Gluten Free) 

 Squash Casserole
This is one of my Grandmother's recipes.  I make it with less butter than she did but its still just as good as a Southern Grandmother's would.  Squash, caramelized onions, sour cream, and bread crumbs.  Serves 4- 6  $11.95  Packaged in an oven-ready casserole pan (6x9).  Heat for 30 - 45 minutes at 350.  (Vegetarian) 

Blue Cheese Rigatoni with Spinach and Roasted Pine Nuts (Entree)
Fresh Spinach, fresh tomatoes, rigatoni, blue cheese, caramelized onion, and sour cream roasted pine nuts, serve warm. $11.95 / Casserole Pan.   Serves 2 - 3 as an entree, 4 as a side.    (Vegetarian)

Planet Burgers
 I am always trying to find a veggie burger that my children will eat.  This one was a hit.  I am offering it to you in a pint container so you can make your burgers to the desired size.  Brown rice, chickpeas, onions, red beans, carrots, almonds, sunflower seeds, wheat free soy sauce, garlic and spices.  $7.99 lb.

Lasagna Entree           

Black bean Lasagna (for two)
This lasagna is low in fat because it is made with cottage cheese instead of ricotta cheese. Black beans, corn, red peppers, green peppers, onions, cilantro, cottage cheese, Cheddar, Parmesan, and Mozzarella cheese, and fresh garlic. Freezes well.  $11.95  Microwavable container. Serve with a fresh organic salad.   (Vegetarian)

The Athlete's Lunch

This is a new dish that I have only made at home.  It's similar to a Harvest Bowl, and is very colorful because it is stacked in the container.  Full of protein and very tasty, it is perfect to pack for lunch if you're riding the trails this weekend.  Kidney beans, roasted tofu, organic brown rice, sauteed kale, caramelized onions.  (Marinade for tofu; soy sauce, ginger, garlic, olive oil, hoisen sauce) $7.95 / pt. containers (Vegan, Gluten Free)

Deviled Egg / Egg Salad
After much debate, we decided in my kitchen deviled egg and egg salad is exactly the same thing it depends on what you grew up calling it.  I make mine with free range eggs, green olives, mayonnaise, mustard, apple cider vinegar, salt, pepper, and spices.  Packaged in 1/2 pint containers.  $5.95.   (Vegetarian, Gluten Free)
