Hey everyone! How was your week? Mine was INSANO!!! On Monday we found out that Passion Parties was acquired by Pure Romance so I have spent every waking minute the past 48 hours learning, sharing, planning, and such with my team. It's a great thing, but I just need more time to learn something COMPLETELY new!!!


I started adding intensity to my training and did a fun INDOOR TRI to test where I am at right now w my fitness!! SUPER FUN! First race is in 80 days!!! Oceanside 70.3.

Other than that I am working toward my GIANT goals for 2016 and feeling confident and hopeful and excited!!

I am  grateful for the women on my team of PASSION ROCK STARS who are stepping up as leaders and ready to make their new biz AMAZING this year!!

Easy Vegan Meal
Thai Peanut Salad

I LOVE my Thai Salad I usually make (I thought I had posted that recipe but just looked back over the past 3 months and realized I never did so I will post it soon). Last week I was craving it but they didn't have the Sweet Ginger Chili Sauce at the store I was at, so I grabbed this Thai Peanut Sauce and ended up making another delish Thai Salad!

 
INGREDIENTS:
-Shredded cabbage (or if you are hard core you can buy a head of cabbage and cut it up yourself) or Cole Slaw mix of your choice
-Spinach
-Arugula
-Thai Peanut Sauce (if you don't get this one, double check your ingredients as some have fish sauce in them)
-Vegan Mayo
-Turmeric (fresh or ground)
-Ginger (fresh or ground)
-Salt and Pepper to taste
DIRECTIONS:
(for one big serving)
-Put 2 cups shredded cabbage or slaw mix in a big bowl
-Add approx 1 tbsp of vegan mayo (more if you want creamier, less if you are watching calories)
-Add approx 1 tbsp of Thai Peanut Sauce (same amound as mayo)
-Add spices to taste
-Stir well
-Fold in 1 cup of spinach
-Fold in 1 cup of arugula
-Eat!!

Bike Workout from my Coach

This is a one hour workout, you can shorten or lengthen to fit your needs, but keep the intervals the same, just shorten or lengthen the warm up and cool down.

10 min warm up

5x2 min as hard as you can w 2 min rest inbetween

10 min recovery (easy)

10 min moderate 

10 min cool down

YIKES RIGHT????

Vegan...FINALLY!

Holy Queso! It Schneriously just took me about 10 years to become a vegan. If you know me, you know I have been a vegetarian since I was 8 years old and have "wanted" to be a vegan since I read "Skinny Bitch" about 10 years ago.
So what took so long?

The same thing most people tell me now that is holding them back from going full vegan...dairy.

There are plenty of people out there writing about the horrors of big dairy farming, the lies from the dairy industry, and the health risks involved with dairy consumption, so chat with Siri or google if you do want deets (my advice is to steer clear of video unless you are hard core...I'm not). Basically you can learn why dairy sucks somewhere else, but I'll share my dairy-elimination journey here.
