Hey gorgeous!!  How was your week? Mine was all ups and downs...not much middle ground! But made it through and hopeful for the rest of December!

Ran a 5K on Saturday 40 seconds faster than the week prior. AND FELT AMAZING! YAY!! Finally getting some speed back after training for all those marathons!

Also got my goals done for 2016...I'll be blogging about them in a couple weeks...of course!!

Other than that I am on DAY 52 of my bike streak, and am loving working with my  cycling coach. I also decided to start a running streak. At least one mile a day! I am on day 3 :)

I am looking for sponsors for my 2016 season now! Currently I am doing 3 70.3 races, 1 Ironman, and several races in-between such as the Horestooth Half, Triple By-Pass, and the Horsetooth 10K Swim. Here are the details on the  SPONSORSHIP OPPORTUNITIES for your biz or cause. 

I am  grateful I am always learning and growing. I am dealing with my failures and mistakes better than I used to...most of the time!! No one is perfect ;)

EASY Vegan Meals...

RAW INDIAN FOOD
 
Indian food is my FAVE so I thought I would try a couple raw recipes. I took 2 recipes from The Sage Avocado and changed them up a little to fit me better. I loved them both, but my junk-food hubby only loved this one, so I am sharing that one...

INGREDIENTS:
Cauliflower Rice
1 head of cauliflower

Curry Sauce
1 tablespoon garam masala
1 tablespoon curry 
1 tablespoon fresh ginger
1 teaspoon salt
1 cup fresh peas
1 handful cliantro
1 cup water
1 cup cashews

Sweet Sauce
1/2 cup raisins
1 banana
1 teaspoon ground cumin
1 teaspoon fresh ginger

DIRECTIONS:
Cauliflower Rice
Pulse the cauliflower in the food processor until it is like rice.

Curry Sauce
In a high speed blender, blend cashews, water, and spices til smooth. Stir in peas and cilantro.

Sweet Sauce
In a high speed blender, blend raisins, banana, and spices.

I poured the curry sauce over a bed of cauliflower rice and added a dallop of sweet sauce. I also doused mine in extra cilantro because that's how I roll!

Workout of the Week...
RUN!!

Each week I will feature a swim, bike, run, strength, core, or flexibility workout.

Run a Marathon for FUN!
So OF COURSE it doesn't have to be a marathon, but I love the challenge of a long, scary but fun run!

Here's how it works...

1. Pick a distance that scares you a little...or a lot!
2. Schedule a day and time. Make sure you give  yourself LOTS of extra time for walking, eating, drinking, peeing, and of course enjoying!!
3. Recruit a couple friends to do it with you.
4. Don't have any time goals or expectations. Goal is just to finish!
5. Share with your friends what you are doing for encouragement. Plus, you will probably inspire or motivate a bunch of others along the way.
6. When you are done, celebrate!!

My friends and I just did our 2nd annual Thanksgiving Treadmill Marathon and we all had a blast! One of them even ended up doing 20 of the miles on 20 different treadmills! A mile on each! Talk about GOOD TIMES!!!

I am a self-described personal growth junkie. Actually that isn't true. All the people close to me would also describe me in the same way so I guess I'm just a personal growth junkie.

So when my friend, Tara, introduced me to podcasts, it was like giving a shot of whiskey to an alcoholic...I was doomed!

These days I listen to roughly 4 hours a day of podcasts. Since I drive, bike, and run a lot that is very easy to do.
