Danie's Stuffed Tomatoes
Still searching for that holiday side dish to dazzle the crowd? Look no further because these stuffed tomatoes bring a fresh kick to a wholesome classic.
Market Ingredients
  • 2 slices of fresh bread
  • ½ cup whole milk
  • 4 pounds juicy tomatoes
  • 1 medium onion, minced
  • 2 garlic cloves, minced
  • 8 ounces button mushrooms, wiped clean, trimmed, and diced
  • 1 ¼ lbs. fresh ground pork
  • 2-3 Tablespoons fresh thyme and/or oregano
  • 1 cup loosely packed fresh parsley
  • 2 large eggs
Pantry Ingredients
  • sea salt and freshly ground black pepper
  • 2 tablespoons extra-virgin olive oil
Directions
Preheat oven to 425 degrees.
Tear the bread into bite size pieces and place it in a small bowl. Cover it with milk, press the bread down so it is completely covered, and let it sit until it has absorbed all the milk, about 30 minutes.
Slice the top off of each tomato and reserve it. Remove the seeds and most of the inner flesh and discard. Lightly season each tomato inside with salt and pepper.
Heat the oil with the onions and garlic in a medium skillet over medium heat. Cook, stirring, until the onions are translucent, about 8 minutes. Season with salt and pepper and transfer to a medium-size bowl. Add the mushrooms to the pan and cook, stirring occasionally until tender 5 to 6 minutes. Transfer to the bowl of onions and garlic.
Add the bread and milk to the ingredients in the bowl, along with the pork. Add the fresh herbs along with the eggs. Blend the mixture thoroughly but not overly, using your hands. Season with salt and pepper and blend well. Cook a teaspoon of the mixture and taste for seasoning, adjust if necessary.
Evenly divide the stuffing among the tomatoes, pressing it firmly into them, and mounding it above the edges of the tomato if necessary. Place the tops of the tomatoes atop the stuffing and bake until they become deep gold, the stuffing is completely cooked, and the tomatoes are tender, about 1 hour.

Reveillon (REH-vee-on).  Nightly from December 13-31.
Reveillon Dinners
Reveillon, an adaptation of a traditional Creole holiday dining custom, will be celebrated nightly in almost 50 restaurants throughout the city. Menus showcase the feasts of Christmas past, present, and future: Four Reveillon restaurants - Antoine's, Galatoire's, Commander's Palace, and Tujague's - are more than 100 years old and feature classic Creole cuisine. Contemporary Reveillon utilizes preparation techniques and products of the modern day not necessarily available to the original Creoles and can be enjoyed at Domenica,  Kingfish, Restaurant R'evolution, The Pelican Club, and many more. Reveillon menus are offered only once a year, making CNOS the only time guests can enjoy this authentic taste of New Orleans.  New participants include: The Bistreaux at Maison Dupuy, Feelings Café, Johnny Sanchez, La Provence, Tivoli & Lee (in the Hotel Modern), and Willa Jean. Diners can indulge in Reveillon at The Gumbo Shop for $34 or be treated to Commander's Palace decadent eight-course dinner for $110 (prices do not include tax and gratuity). Click here to view Reveillon menus.

Café Degas - Step into this small French bistro on Esplanade Avenue and enjoy picturesque dining amidst twinkling white lights. Reveillon menu this year includes crawfish ravioli with lemon beurre blanc and rack of lamb with fingerling potatoes and smoked Vidalia onions. A glass of ruby port and chocolate pot de crème finish an astonishingly delicious - and affordable - meal. $42

Upperline - Join the locals at Uptown's artsy, contemporary Creole restaurant where hospitality, food, and wine come together to create a truly unique dining experience. Hop the streetcar and ride to Upperline Street (could we make it any easier?), enjoying the view of historic homes and holiday lights on St. Charles along the way. Once there, make sure to order the Duck and Andouille etouffee with Louisiana pepper jelly and the grilled fish piquant with "hot & hot shrimp," both Upperline originals. $45
1413 Upperline Street NOLA 70115, 504.891.9822

Muriel's - Located in the heart of Jackson Square, this French Quarter dining destination has a history as rich as the gumbo they serve. Enjoy sweet potato bisque with poached pear, duck rillettes with apple mostarda, and eggnog pound cake with fig compote before checking out the table set and wine poured for Pierre Antoine Lepardi Jourdan, Muriel's resident ghost. $48
801 Chartres Street NOLA 70116, 504.568.1885

Brigtsen's - There are few remaining chefs in New Orleans who have seen and done as much as Frank Brigtsen. His popular restaurant in the River Bend will be celebrating its 30th anniversary next year, and Brigtsen's recipe for success is simple: serve nothing but the best, and treat everyone like family. Gather around the table with oyster chowder, barbecue shrimp with shrimp calas, roast duck à l'orange with dirty rice and sweet potato bread pudding with pecan praline sauce. And if you love Brigtsen's food, you'll really love following him on Instagram. $48

Brigtsen's recipe for success is simple: serve nothing but the best, and treat everyone like family.

Arnaud's - Since 1918, this family-owned French Quarter restaurant has remained true to the high level of service and quality of food upon which it was founded. Today, fourth-generation owners Katy and Archie Casbarian carry on the traditions we have all come to know and love, like the Reveillon menu. Begin with an amuse bouche of daube glace, then Arnaud's award-winning shrimp remoulade, pork flatiron steak with spinach Rockefeller, and gateau de sirop (Cajun syrup cake) to bring the meal to sweet end. $49
813 Rue Bienville NOLA 70112, 504.523.5433

Pelican Club - Housed in a 19th-century French Quarter townhouse, the Pelican Club has served modern Creole-Acadian and international food since 1990. Noteworthy dishes are the turtle soup au sherry, baked oysters, pork chop with boudin stuffing, and coconut cream pie. And, like many New Orleans restaurants, Pelican Club offers a lagniappe, or "little something extra," in the form of Bourbon-spiked eggnog sure to put you in the holiday spirit. $52-$60

Strawberry and Avocado Spinach Salad with Candied Pecans

Serves: 4-6
Ingredients
  • 6 cups baby spinach
  • 2 cups strawberries, stems removed and sliced
  • 1 ripe large avocado, diced
  • 1 teaspoon lemon juice
  • 1/4 cup crumbled feta cheese
Stovetop Candied Pecans
  • 2 tablespoons butter
  • 1 cup pecan halves
  • 2 tablespoons brown sugar
Creamy Poppyseed Dressing
  • 3 tablespoons plain Greek yogurt
  • 4 tablespoons mayonnaise (I used olive oil mayonnaise)
  • 1 tablespoon + 1/2 teaspoon olive oil
  • 1 and 1/2 tablespoons raspberry vinegar
  • 2 teaspoons white sugar
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon onion powder
  • Pinch of salt and pepper
  • 3-4 teaspoons poppy seeds

Instructions
  1. On the stovetop over medium heat, melt the butter. Stir in the pecan halves until completely incorporated. Stir in the brown sugar and continue to stir until the nuts are fragrant and the sugar is sticking.
  2. Remove from the stovetop and spread evenly on a wax paper-lined baking sheet to dry.
  3. For the dressing, combine all of the ingredients EXCEPT for the poppyseeds in a blender or food processor. Pulse until combined. Taste and adjust to preference. Thin the dressing if desired with a tiny bit of water.
  4. Stir in the poppyseeds. Store the dressing in the fridge in an airtight container until ready to serve the salad.
  5. Meanwhile, remove the stems of the strawberries and slice. Remove the peel and pit of the avocado. Chop the avocado and then mix with the lemon juice to avoid browning.
  6. Toss the strawberries and avocado with the spinach.
  7. When ready to serve the salad, toss with the dressing. Stir in the feta cheese and dried candied pecans.
  8. Enjoy.
Notes
The dressing makes more than you will need for the salad. Store leftovers in the fridge for 3-4 days. This salad is best when it is dressed right before eating. It doesn't store well if dressed. I recommend dressing the salad and adding the cheese + pecans right before serving.

Chocolate, Orange, and Beet Brownies

Prep Time
Cook Time
Total Time

Orange is a good friend of both beets and chocolate, and all of the flavors combine to make one hell of a good brownie.
Author: Serge Lesournec
Recipe Type: Baking
Serves: 10
Ingredients
  • 3 small uncooked beets
  • 9 ounces good-quality unsweetened chocolate (minimum 70% cocoa solids)
  • 1 cup plus 2 tablespoons unsalted butter, plus extra for greasing
  • 1¼ cups superfine sugar
  • 3 free-range eggs
  • Zest of 1 orange and juice of ½
  • 1¼ cups self-rising flour
  • Crème fraîche, to serve
Instructions
  1. Boil up your beets until tender to the point of a knife, about 30 minutes, then let cool enough to peel. In a food processor or blender, blend to a purée and set aside.
  2. Preheat the oven to 350°F. Lightly grease and line a large baking pan at least ¾-inch deep.
  3. Break the chocolate into pieces and place in a heatproof bowl over a saucepan of barely simmering water. Add the butter in cubes and let melt, stirring once or twice.
  4. In another bowl, beat the sugar with the eggs until smooth and creamy. Stir in the melted chocolate, orange zest and juice, and puréed beet, then sift in the flour and stir until combined.
  5. Pour the batter into the pan and bake for 15 to 20 minutes.
  6. If you plan to reheat the brownies before serving, stick to 15 minutes, or even less if you like a gooey brownie! Serve with crème fraîche.

Tasting Notes
With tempting aromas of dark cherry, blackberry and spice, Zin-phomaniac is a complex, full-bodied wine with juicy, approachable flavors of ripe blue-purple fruit and dark semi-sweet chocolate. A kiss of vanilla and a touch of brown baking spice add depth to the long, satisfying mouthfeel.

Dine with Mosquito Supper Club
Two charming hosts (and fantastic cooks) serve up authentic Cajun food, family-style.
Martin brings her family's food from Chauvin, LA, to the city in a family-style setting. Platters are set down on the table, and everyone digs in. It's a dining style New Orleanians relate to, whether they're from Irish, German, Italian, or Afro-Caribbean families. Cajun music fills the dining room (limited seating, reservations only) as guests enjoy a five-plus course meal.

A sample menu, this one for fall, is quintessentially Cajun: doughy "Lagniappe Rolls" with Steen's Butter (as if butter isn't decadent enough, this one is laced with cane syrup from Abbeville, LA); crispy eggplant fritters; gumbo with shrimp, crab, and okra; cucumber and tomato salad with Steen's vinaigrette; stuffed Lousiana crabs; and blackberry dumplings with "Pop Rouge" ice cream for dessert. (Local folk of a certain age may remember the old "Pop Rouge" strawberry/cream soda from Lafayette.)

This fall, Mosquito Supper Club commences on Thursday nights at 810 N. Rampart Street, a light-filled, second-story space in the French Quarter with a can't-beat-it view of Armstrong Park. Dinner begins promptly at 7:30 p.m. Go to their site's reservations page to book your seats... and meet your adopted Cajun family.

Extra helping: Michot and Martin also run Curious Oyster Company in St. Roch Market, open daily, if you can't make it to a supper club event.

Since March 2, almost 2,000 students have signed up for these free passes, and more than 450 of those are local students who have made repeat visits to the museum.  Keep in mind that we are in the month of September-that's roughly 300 teens per month. Date of Event: January 8, 2016

Time: 7 PM

Event: Re-Enactment of the Battle of New Orleans, Night Battle

Location: 8207 Patricia St., Chalmette (Right behind the Walmart, adjacent to Torres Park)

The Meraux Living History Park and the Louisiana Living History Foundation will host a FREE re-enactment of the Battle of New Orleans to celebrate the 201st Anniversary. The Public is invited to attend, and learn about this most consequential battle in American History.

Last year, the LLHF hosted 1588 historical re-enactors for over seven nations to put one of the largest Battle Re-Enactments in American History. According to St. Bernard Parish, the event constituted the largest economic impact of any tourism event in St. Bernard history.

This year's re-enactment will be the main event of a four day commemoration of the Battle of New Orleans, that includes free symposiums on the Battle at Nunez Community College on Thursday & Sunday (Jan. 7 &10), and Living History Demonstrations on Friday & Saturday, a Saturday Night (Jan. 9) premier of the Documentary: New Orleans 1815 "Such stuff as dreams are made on", a film about the effort to put on last year's re-enactment, presented at Docville Farm.

LLHF's annual historical festival commemorating the Battle of New Orleans occurs on at a leased tract of land located off of Patricia Street in St. Bernard Parish, the original geographic region where most of the Battles of the War of 1812's New Orleans Campaign took place. It occurs thanks to the generosity of the Joseph & Arlene Meraux Charitable Foundation, the Honorary Consul of Great Britain Mr. James Coleman, and Mr. Terry Tedesco

"In January 2015, we assembled on our new Meraux Living History Park more people in War of 1812-era uniforms than at any time since January 1815," explained LLHF military historian and President Tim Pickles. "Re-enactors came from the United Kingdom, Australia, Canada and across the United States to put on this event to celebrate the 200th Anniversary of the Battle of New Orleans. Moreover, most people don't realize it, but it literally takes an act of Congress to have re-enactment on a Federal Battlefield. That's why we created the Living History Park on Patricia Street."

Federal law currently prohibits the re-creation of a battle at a National Park site, including the nearby Chalmette National Park, where the final battle took place on Jan 8, 1815. The Meraux Foundation's and Mr. Terry Tedesco's agreement to lease a large undeveloped  land tract allowed the highly successful 2015 re-enactment of the five land battles fought between American forces under Gen Andrew Jackson and British forces under Gen. Edward Pakeham to be a feature of the Bicentennial Commemoration. The construction of a replica of the 1815 Battlefield was intended to create a Living History Park to hold the Annual Re-Enactment each year.

The purpose of the LLHF is to increase public awareness of History in general--and Louisiana history in particular--by presenting live shows, re-creations, documentary films, websites and exhibitions, both temporary and permanent, that highlight the history of the State of Louisiana and its people and their antecedents, with particular attention being paid to the commemoration of centennial, bicentennial and tercentennial anniversaries in the State of Louisiana. LLHF acts as a clearinghouse for ideas, and a resource to assist communities throughout the state to research and record their own history, in co-operation with other historical groups.
