Hey Everyone... How was your week??? Mine was AMAZEBALLS!!! Read below to find out WHY! OK OK I'll just tell you...it was my birthday on Friday!! I celebrated like crazy!! I swam 4,300 meters, biked 43 miles, and ran 4.3 miles. I had lunch at my fave restaurant w my mom and friends. And then went to see SPECTRE with my hubby. ALL MY FAVES ROLLED UP IN ONE FABULOUS DAY! YAY!

I am super excited because I have actually sold some copies of my new ebook on living in an RV!!!  Check it out...



I also started coaching with Loveland Swim Club so I am back hanging around awesome swimmers and I LOVE IT!

Other than that I am on DAY 24 of my bike streak, started running again...a little, and am swimming at my first swim meet in like 10 years on Saturday! FUN!

EASY Vegan Meals...

My AMAZING Pumpkin Pie
 
So the season between Halloween and the New Year for me is PUMPKIN EVERYTHING season and I LOVE IT!! The next few weeks I will be posting some easy vegan pumpkin recipes.

My Pumpkin Pie is WAY healthier than most...plus it's cruelty-free which ROCKS!! I like it "spicy" rather than "sweet" so if you like more sweet and less spice, add more sweet stuff and less spices :)

WHIPPED "CREAM"
When I add on whipped "cream", mine is plenty sweet!! I have tried to make vegan whipped creams in the past with NO success, so I buy mine. I have tried both So Delicious Coconut, which I don't like because it tastes too coconuty and overpowers my pie, and Soyatoo Rice Whip which I LOVE!!! You can find both at most health food stores.

CRUST
I have made my own crust before, and will again, but this time I didn't have the time, patience, or desire, so I found one with as few crappy ingredients that I could in the small town I live in. My advice: read the ingredients!! Not all are vegan!!

PIE FILLING
1 1/2 cans of 100% pumpkin
1/4 c brown sugar
1/4 c vanilla almond milk (unsweetened)
1/4 c grade B maple syrup
3 tbsp thickener like cornstarch or arrowroot (I used pancake mix because that is all I had in the house)
1 tbsp pumpkin pie spice
1 tbsp cinnamon
1 tsp ground ginger
1 tsp ground cloves

DIRECTIONS
1. Preheat oven to 425
2. Whip syrup and thickener in a small bowl
3. Mix all other ingredients together
4. Combine both bowls of ingredients into one bowl
5. Put all the pie filling into your crust
6. Bake for 45 minutes
7. Cool for an hour
8. Refrigerate for an hour (at least)
9. ENJOY!!!

PIYO STRENGTH

I have talked a little about PiYo before, but I have NOT been doing any strength training and it's time I do. PiYo is my fave way to get it in, so I wanted to share a couple videos AND invite you to join me this winter in doing the program! I just ordered it...again (let someone borrow mine and I completely forgot who I loaned it to)...so I will start when it arrives!

I know a lot of people who don't celebrate their birthdays, who don't like to make a big deal about living another year, who are not excited about getting older, and who don't want everyone to know it's their special day. I am NOT one of those people.

On my birthday, if you don't already know it's my birthday, I will let you know. Even the checkout lady at Whole Foods knows it's my birthday that day!

And I don't just celebrate one day, I pretty much celebrate the entire month!
