Hey Everyone!! How was your week?? I'm a little sad this week because after my AWESOME 38 mile run (longest run EVER!!) my sciatica got inflammed so now I am having a tough time moving and sitting. I NEED it to be 100% by Sunday for the Horsetooth 10K Swim!!! So I am resting a TON which is not good for my head :)

Here is last year's RACE REPORT for the swim. My goal this year is under 3 hours!!

I am still looking for sponsors for my 50 Mile 9/11 Tribute Race next month and my  7 Marathons in 7 States in 7 Days in October. Here are the details on the  SPONSORSHIP OPPORTUNITIES for your biz or cause. 

I am  grateful for so much this week! Hot showers, delicious food, online orders, friends, success mentors, movies, a soft dog, and especially podcasts for getting me through my longest mileage week EVER last week...85 miles!

EASY Vegan Meals...

"Healthy" Taco Salad
 
Sometimes I just want JUNK FOOD for dinner!! But I know I will feel like crap after so I "healthy" it up by making a few small changes. This is such a recipe...
 
Ingredients...

Corn Chips made w corn, oil, and salt only. Pref non-GMO and/or organic.

Healthy Greens Blend...I get my packaged with things like kale, spinach, chard, etc

Tomato-diced (I used 2)
Avocado-diced (I used 1)
Cilantro-chooped (I used 1 cup)
Garlic-chopped (I used 2 cloves)
Green Chiles-chopped (I used 1/2 cup)
Black Olives-chopped (I used 1/4 c)
Vegan Mayo (Vegenaise, Just Mayo, etc)-I used 2 tbsp

To prep...

Mix the amount you want in all the bottom 7 ingredients. I put what I used, but you can adjust according to your specific tastes. 

Lay a layer of greens on your plate...the more the better...I used 2 cups and then had seconds and used a cup.

Crunch up chips into big pieces over the greens (I used 2 handfuls for each plate I had)

Spread the wet mix of toppings over the entire thing and stir it all together. You can keep a few big chips out to scoop up the delicious mess at the bottom of the plate when you are done!

The Importance of Knowing Your Mission...

In the world of Personal Growth, your Mission is a big deal. In network marketing we call it your "why".

It took me years to figure mine out. Partially because I was comparing what I wanted to other people and so mine ended up seemingly small and selfish, and partially because I was so wrapped up in my own world of learning to take care of myself that I couldn't see the forest through the trees...or whatever that saying is.

I spent time in workshops and seminars figuring out what my passions are, what I wanted to do with my life, and how I wanted to impact the world with my Mission. I met people who wanted to stop world hunger and cure cancer and put clothing on all the precious babies on this earth. I couldn't compete with that! All the ideas I came up with were so small and insignificant so I always thought I needed to come up with something bigger and more impactful.
