Hey Everyone!! How was your week??  Stroke & Stride ended on Wednesday so summer must be coming to a close. I ended up winning my age group for the series!! YAY! Thursday I "ran" my longest run ever (32 miles) and then Saturday we moved out of the RV where we have been living the past 2 1/2 years and back into our house in Colorado. I'll be posing about that this week in my blog at www.FoodFitnessFinanceFun.com.

EASY Vegan Meals...

TIME FOR DESSERT!

 

So I have never posted a dessert recipe. Mostly because I rarely eat sugar. If you want some super AMAZING recipes for desserts, I have a TON in our I HEART VEGAN RECIPES GROUP so you can grab some there. 

 

Here is one I have about once a month. Ice cream used to be a total comfort food (PROOF HERE) but now that I rarely eat sugar, my body doesn't like it very much. So when I do have it, my body yells at me and reminds me not to have it again...until I forget!!!

 

Anyhoo...here is my recipe...

 

I start with a non-dairy ice cream. There are quite a few out there now.

My faves are...

So Delicious Cashew Milk Ice Cream

So Delicious Coconut Milk Ice Cream

Almond Dream Frozen Non-Dairy Dessert

 

Then I top it with my favorite toppings!! Simple as that!!

Natural Peanut Butter

Amys Chocolate Cake

Enjoy Life Vegan Choc Chunks

Or any other vegan treat I want to top it with!

When I am feeling KIND OF healthy I will pick fruit.

Strawberries and vegan whipped cream makes a great "strawberry shortcake".

Workout of the Week...RUN!!

Each week I will feature a swim, bike, run, strength, core, or flexibility workout.

FARTLEK

Haha! I said FARTLEK!!  

A farlek is when you run fast then slow then fast...like super simple intervals...only not as structured.

Here's how it works...

During your run, pick a tree or a pole or another landmark and you can do a few things...

1. When you get there run as fast as you can for 100 steps
2. When you get there find another landmark and sprint to that one
3. When you get to the pole, pick up the pace to the next pole, then pick it up to the next pole, then sprint 10 steps, then walk to the next pole and start over.
4. Jog easy from one tree to another, turn around and sprint back, repeat
5. Every mile sprint 50 steps

ETC ETC ETC!! You get what I'm saying right! Mix it up, have fun, variety is the spice of life!!

How to get OFF the Super Slippery Slope...

 

So the past 10 days I have eaten perfectly, which by the way is some kind of record. By perfectly I mean I have generally stuck with my plan AND haven't over eaten even once! I do my grocery shopping on Monday, which was a week after my initial "perfect eating" and I found myself looking for a treat to reward myself for making it a whole week.

 

Some of you are thinking "nothing wrong with rewarding yourself for your hard work", but for me there is. It's a super slippery slope (say that 3 times fast). It's hard to explain with food for people who don't have food issues, so I like to compare it to an alcoholic who has been sober for a week. She decides to meet her friends at the bar as a reward for being sober a whole week.
