Made from traditional Mediterranean Moscatel grapes, this vinegar speaks to the attributes of the grape itself. You will notice floral hints on the bouquet. It has overtones of honey, peach, and other stone fruits.  Use this vinegar to upgrade salads or white meat braises.  Also extraordinary if you are following the new trend of using vinegars in cocktails.    
 

  

Boneless Surryano Ham

 

 Edwards Surryano hams & produced exclusively from 100% pasture-raised, Six-Spotted Berkshire hogs & are the new American alternative to premium-priced European Prosciutto and Serrano hams. This completely boneless, perfectly marbled Surryano ham is dry-cured by hand with natural ingredients and smoked for a full 7 days over smoldering hickory wood.

Then, our Surryano hams are aged for more than 400 days to put the finishing touch on its unique mahogany color and rich, distinctive flavor. Sliced paper-thin, it's the perfect complement to melon slices, olives, Spanish-style tapas... and great on bread with olive oil and cheeses such as provolone and mozzarella. Ready to slice ultra-thin and serve at room temperature for optimal flavor.
Old Kentucky Tomme     
 
Buttery and rich, with mild "cellar" and mushroom overtones, this aged cheese falls somewhere between an American Jack and a Tomme du Savoie. When young it has a smooth pate, and a white to grey/tan rind. The rind becomes crusty and darker with age and the flavor develops a slight lipase "kick" at the finish, while the texture becomes more translucent and brie-like. Old Kentucky is sumptuous, but not cloying, and is better by compliment rather than contrast.

Annato seed is also known as achiote. This seed grows on the annato tree. It is used primarily in Mexican and Caribbean cooking to impart a rich yellow/orange color. Annato seed makes a good substitute for saffron's golden coloring, at a fraction of the cost.
