Hey Everyone... How was your week??? Mine was VERY productive...which isn't always the case! I tend to "play" more than I "work" most of the time!! 

My favorite part was the swim meet I did on Saturday. It was my first meet in over 10 years and I had a blast. I swam 800 Free, 400 Free, 400 IM, 200 Breast, and 100 Breast. I cut over a minute total in time off my entry times! 

The rest of the weekend was re-watching THE HUNGER GAMES series to prep for Mockingjay Part 2 this weekend.

Other than that I am on DAY 31 of my bike streak, and started working with a cycling coach. He is KICKING MY ASS! But I love it!!!

I am looking for sponsors for my 2016 season now! Currently I am doing 3 70.3 races, 1 Ironman, and several races in-between such as the Horestooth Half, Triple By-Pass, and the Horsetooth 10K Swim. Here are the details on the  SPONSORSHIP OPPORTUNITIES for your biz or cause. 

I am  grateful for vegan comfort food. When I was working on becoming 100% vegan, my "slip-ups" happened when I went on my emotional eating binges. These days there are so many delicious vegan options so when I need something a little "junkie", it's still vegan.

EASY Vegan Meals...

Pumpkin Pancakes
 
So the season between Halloween and the New Year for me is PUMPKIN EVERYTHING season and I LOVE IT!! The next couple weeks I will be posting some easy vegan pumpkin recipes.

My Pumpkin Pancakes are SUPER easy, gluten-free, and DELICIOUS!!! My junk-food hubby requests them weekly!

I USE A MIX!
You can for sure make these from scratch, but you know that's not my style. I use Bob's Red Mill Gluten-Free Mix and veganize it by using a " chia-egg" and water instead of egg and milk. You can also use nut-milk but I have used them and noticed no difference in consistency or taste so why bother with the extra calories and expense!

CHIA EGG
I use a "chia-egg" for my pancakes. This also works with flax if that is all you have in the house. If not, go buy some chia, it's a super healthy addition to your smoothies, cereals, oatmeal, etc.

To make one egg, combine 1 tbsp chia seeds and 3 tbsp warm water. Let set about a minute and then add to whatever you are baking.

INGREDIENTS
2 tbsp pumpkin for each batch
1 tsp pumpkin pie spice
1 tsp cinnamon
1/2 tsp ground ginger
1/2 tsp ground cloves

DIRECTIONS
1. Set a frying pan on the stovetop and turn on to medium to warm up
2. Follow the directions on the bag of mix substituting a chia-egg or another egg replacer of your choice for the egg and nut milk or water in place of the milk
3. Add in the pumpkin and spices
4. Cook pancakes as directed

TOPPINGS
With Pumpkin Pancakes, my fave way to top them is with Earth Balance and Grade B Maple Syrup and that's IT!!

Why I Love Streaking...

Sorry to disappoint you, I don't mean streaking like running through the quad at a college party naked! I mean...if you're into that, I don't judge, I have just never done it to see if I like it, but any and all streaking stories are welcomed (no pics please, I still have Will Ferrell from OLD SCHOOL stuck in my mind and that's plenty).

I'm actually talking about using "streaking" to pick up a healthy habit and repeat it daily for a certain length of time. This can be for health, nutrition, fitness, business, finance, relationship, personal growth, spiritual or any other area of your life. It's so easy.You just pick something and commit to doing it every single day until the date you decide to end it.
