Houmas House Plantation and Gardens

 

Chocolate Wild Turkey Creme Brulee Signature Entrees from The Carriage House Restaurant 
Chocolate Wild Turkey Creme Br�l�e

Makes 4 servings

 

3 ounces dark chocolate, finely chopped

10 egg yolks

1/4 cup tablespoons sugar

1 1/4 cup heavy cream

1 vanilla bean, split

1 1/2 cup Wild Turkey

 

 Preheat oven to 300 degrees F. Place the chopped chocolate in a small bowl. Set aside.

 

In a saucepan over medium heat, bring sugar, heavy cream, split vanilla bean and Wild Turkey to a simmer. Once the mixture starts to get foamy, remove from heat. Take out the vanilla bean halves and scrape out the seeds, adding the seeds back to the mixture. Pour the mixture over the chopped chocolate and let sit for a minute.

 

Gently stir until the chocolate is completely melted. Slowly pour half of the chocolate mixture into the eggs while whisking. Continue to whisk, and slowly pour in the remaining chocolate mixture. Add another drop if needed. Strain the custard into a spouted measuring cup. Evenly divide the custard between 4 ramekins. Place the ramekins into a baking dish. Pour boiling water into the baking dish until the water comes up to about the custard level. Bake 25 - 60 minutes, depending on the size of the ramekin, or until the custard is set (it should still be jiggly in the center). Remove the baking dish from the oven and let the ramekins cool in the water bath.

Transfer to the refrigerator and chill for at least 4 hours. Once chilled, sprinkle a generous amount of sugar on the top of each custard. Using a kitchen torch, caramelize the sugar. Let sit about 5 minutes before serving.

The cooler breeze can only mean one thing...Fall is here! This is such a wonderful time to visit the Sugar Palace. For one, starting this month my 38 acres of gardens begin the month-long process of color renewal.  We will plant 50,000 new flowers that will thrive through winter and add a colorful backdrop to every inch of our grounds.

 

Our new restaurant, The Carriage House, is now open every day for breakfast, afternoon tea and dinner!  This has been such an amazing addition to our already impressive culinary offerings.  But I suggest you make reservations because these new menus have our guests so excited.   You may view our menus by clicking here.

 

In addition to the dining options, we have completed construction on all 21 cottages at the new Inn at Houmas House!  If you thought the first eight rooms were impressive, just wait until you see the suites!  These two room, private retreats are just perfect for a romantic escape, a bridal party, or a special event.  You can read about the new Inn here.

Houmas House is reintroducing the concept of the drive-in movie, with a twist.  For a mere $10.00 per person you may bring a blanket or your favorite lawn chair and come enjoy some of the greatest classic films.  The opening date of Friday, October 18 will feature The Great Gatsby starring Robert Redford. Dinner tables are available on the lawn by reservation and dinner will be served at 7:00 PM.  It's recommended you arrive for your seating by 6:30.  If you choose to dine with us, you may order a la carte from our new Carriage House Restaurant Menu. The James Beard Foundation promotes the continued education, creativity, and culture of food enthusiasts.  It holds events and dinners monthly, highlighting the most acclaimed chefs throughout the nation. In February 2014, our very own Chef Jeremy Langlois will travel to New York and have the distinguished honor of sharing our South Louisiana culture and cuisine.  We are delighted he has been chosen and look forward to sharing more details with you in the upcoming months. Now, with the addition of the Inn at Houmas House you don't have to leave the plantation just yet. The newly constructed cottages are elaborately decorated and complete with the highest quality amenities.  In the morning you may enjoy your coffee on the front porch and watch the sun rise over the Mississippi River.  A full breakfast is included to complete your relaxing morning. Feel free to wander through the gardens and take in the serenity of early mornings at Houmas.  We can't think of a better way to end your event at the Sugar Palace.
