Hey Everyone... How was your week??? I love beginning a new month so I am looking forward to tomorrow! Although September was pretty darn good!! I am on day 3 of a new challenge in an attempt to CRAM for my 7 marathons in 7 states in 7 days where I am running 10 miles a day for 10 days. I have been so busy though that half of the miles are walking while taking Joey out or while on a call. BOO!

Other than that I am getting excited to get back on my bike in October!!! I have been off it for an entire year!!! AND...super excited about my triathlon season next year with three 70.3 and an Ironman!!

I am  grateful that my body is almost fully recovered and is holding up with me jumping back into my running mileage like I didn't take a month off!!!

EASY Vegan Meals...

Fake Meats
 
People always ask me"If you don't want to eat animals, why do you want fake meats that taste and feel like animals?"

GREAT QUESTION!!!

I think fake meats are GREAT for transitioning vegetarians and vegans or people who are eating vegan for their health. A lot of people love meat but want to cut down on it for health or environmental reasons so the fake meats are perfect for that!! 

Personally I rarely eat fake meats, but sometimes my hubby wants a burger or hot dog and I love that we can eat them together. Plus I don't want to support the meat industry and since my hubby still eats meat, it's a win-win for us both!!

There is a newer company out there called Field Roast that makes the BEST fake meat and cheese products out there in my opinion. Their Chao Cheese is AMAZEBALLS (and it took me 10 years to give up cheese so that is saying a lot) and their hand formed burgers are my hubby's very fave meal I make! He likes them WAY better then a real burger. BONUS!!!

Here is a mixture I made yesterday for Taco Tuesday with Field Roast Chipotle Sausage cut up and sauteed in with onions and garlic. It was DELISH!!!!

How I Became a Morning Person...

If you know me, you know I am NOT a morning person by nature! As a kid I missed the bus at least once a week because I could not get my little butt moving pre-dawn.

As I got older I chose swimming as my primary sport which consisted of early morning practices all week AND early morning meets every weekend. My body never adapted.

When I started my career as a personal trainer, I had to work when I was needed...before and after work. This meant many more years of 4am alarm clock to be excited to motivate tired clients by 5am.

And then as an adult I chose a hobby (triathlon) that training AND races typically cater to the early riser.

For big races, the transition area opens at 5am which means you have to wake up, eat, get ready, load all your crap, and travel to the venue all before sunrise. Still never became a morning person.

In fact, #357 reason why I never had kids was because the thought of having to get up early...and often...gave me massive amounts of anxiety!
