Hey Everyone... How was your week??? We have 2 more weeks of middle school swim meets on Wednesdays and then I will be back to my regular HUMP DAY awesomeness and get this out ON TIME!!! 

BIG NEWS THIS WEEK...
We sold our RV and were able to pay off our RV, Rick's truck, and our credit card so as of today, we are officially DEBT FREE other than our house!! BOOM!!! We have been working toward this it feels like FOREVER!!!! Next up? Baby Step 3...get an emergency fund going!!! Join our Financial Freedom group HERE!

Last Saturday I ran a half marathon only 5 days after the marathon in ND so it was great training for my 7 marathons in 7 days. I ran the whole 13.1 (YAY)!! And even negative splited the 2nd half...BONUS!

Other than that I am getting excited to get back on my bike in October!!! I have been off it for an entire year!!!

EASY Vegan Meals...

PIZZA! YES!!!!!

 
If you know me AT ALL you know I love pizza!! I rarely eat it because I avoid gluten and yeast PLUS it's a total comfort food so I eat WAY TOO MUCH!!!!

Well...I have an easy vegan solution!! I made this gem the other night and my junk-food hubby LOVED IT!!! Plus, they are small enough so that I can't over eat AND we each made our own so we could put our own extras on it!! BOOM!!!!

So I started w a gluten-free, dairy-free Amy's Pizza. There are a few different brands of gluten-free, vegan pizzas out there like Daiya and Udi's. This is just what they sell at our local store!

On mine I added mushrooms sauteed in garlic and olive oil and fresh basil. OMG SOOOO DELISH!!! Next time I will also add sun-dried tomatoes and extra " cheese". Daiya melts nicely and is sold at most grocery stores these days!!

BONUS that hubby requested it again for next week! #BestWifeEver

Workout of the Week...STRENGTH!!

Each week I will feature a swim, bike, run, strength, core, or flexibility workout.

 
PiYo Push-Up

PiYo is one of my favorite workouts. It includes stregth, core, mobility, and flexibility ALL in one workout!! One of the best strength moves it has in it is called a PiYo Push-Up. It's a combo of a tricep push-up and a squat. Here is a GREAT video demonstrating FOUR different levels (from easiest to heardest) of PiYo Push-Ups AND slo-mo of proper form.

Where do you get your Protein???

If you are a vegetarian or vegan you have probably heard this question more than once. Or more than once a day!
It's interesting how many people think that meat is the only source of protein.

When I first became a vegetarian at age 8, I started learning about nutrition. Back then in order to have a "compete protein", you needed to combine foods at each meal. I'm sure most of you have heard of some of those combos.

Some examples are: beans and rice, peanut butter and bread, legumes and quinoa. Okay...that last one was a stretch for an 8 year old but is a great example in today's world. I mean, I know quinoa is an ancient grain and all, but back in the 70s in white trash suburbia, it wasn't a known food!!
