RECIPE
Moroccan Chicken

Ingredients
4 chicken leg quarters, skinned
1 tablespoonolive oil
1 medium onion, cut into chunks
4 cloves minced garlic
2 medium carrots, cut into chunks
1 cup canned chickpeas, drained and rinsed
1/2 cup golden raisins
1 tablespoon ground cumin
1 teaspoon turmeric
5 cups on chicken or vegetable broth
2 medium zucchini, cut into chunks
Salt and pepper to taste
2 cups cooked coucous

Directions:  
1. In large, non stick soup pot, place olive oil over high heat.
2. Add chicken and cook about 10 minutes, turning to brown all sides.
3. Stir in onion, garlic, chickpeas, ginger, carrots, raisins, cinnamon, cumin, turmeric and broth.
4.  Bring to simmer, reduce heat adn cook for about 20 minutes.
5. Stir in zucchini and simmer an additional 10 minutes.
6. Remove cinnamon sticks. 
7. Season with salt and pepper to taste.  
8. Serve in large bowls over couscous

A trip to South Africa wouldn't be complete without spotting Africa's Big Five. We'll stay in a fabulous safari lodge and enjoy game viewing in renowned Kruger National Park. In Johannesburg we'll visit the extraordinarily powerful Apartheid Museum that documenting the historical passage from the early peoples of South Africa to the birth of democracy in the nation. To end off this great adventure we'll take in the incredible sight of Victoria Falls!
