Hey Everyone!! How was your week?? I ran a 10K for Father's Day and got my fastest time in 2 years!! YAY FOR BEING 42!! And since all the other ladies were home celebrating Father's Day with their families, I ended up winning! DOUBLE YAY!!

I kicked ass again in last week's  Stroke & Stride with my best time so far this Summer...and only 5 days after my marathon. If it sounds like I am bragging, I am...I am super impressed with my recovery, strength, and endurance my body has right now. It's like the more I take care of myself, the better my body works...GO FIGURE!!!

And the BEST news of all from the past week...
I lost 4.8 pounds total doing the 21 Day Fix. I am starting another round July 6th if you want to join me!! 

I am grateful for ALL my Success Partners Pam, Carrie, Tara, Kim, Michelle, Stormy, Wendy and Rick <3

EASY Vegan Meals...

GRAPE SALAD

 

Ahhhhh...the old family favorite made vegan! Just a note, my non-vegan, junk-food hubby LOVES most of my vegan meals, but he won't get behind this one. It's still one of my faves. I rarely make it because it's a trigger food and I end up eating the entire batch!

  • 1 lb rice pasta shells
  • Giant bag of green grapes
  • Vegenaise
  • Potato Chips (I like Boulder Crinkcle Cut)

Boil the noodles until al dente, drain, cool, mix in grapes and enough Vegenaise to moisten the mixture.

Cool completely in fridge. When ready to eat, take a scoop, mix with enough Vegenaise to make it gooey like potato salad or coleslaw, and then smash up potato chips and sprinkle on top.

Workout of the Week...RUN!!

Each week I will feature a swim, bike, run, strength, core, or flexibility workout.

Grassy Park Run

Ideally if you have a park about a mile or so from your house, you can use the jog to the park as your warm up and cool down. If not, drive to the park and do a 10 minute WU and CD on your own.

During your WU (or you can scout it out in advance) find a strip of grass between 100-200 yards long. If you can't find one that long, you can use a shorter strip and double the length of each interval.

Each round has 3 intervals...
1. Sprint-all out as hard as you can
2. Tempo-a pace that feels moderate, not easy not hard
3. Recovery-walk or jog

Repeat as many times as you need to fill your time/distance of your run for the day.

BONUS to find a strip of grass underneath a row of trees!!!
