Well Seasoned

Introducing the Memphis Wood Fire Grill

By Peter Santrach, Owner, Mingle and Studio M Interiors

If you love to grill and appreciate the earthy taste of smoked meats, you have to try this grill! The Memphis Grill is fueled by wood pellets, which are fed into the burner by an electric auger controlled by a thermostat. The thermostat can be set to a specific temperature, just like an ordinary oven. You can grill, smoke, roast, and even bake cookies in the Memphis Grill. I have owned a Memphis Grill for several years and use it every weekend at our cabin up north. We enjoy smoked ribs, chicken breasts, chicken thighs, salmon, turkey, beef brisket, pork shoulder, and more.

Smoking meat on this grill is truly foolproof. Simply season the meat, fill the hopper with wood pellets, set the thermostat, and go have a beer! You can put the meat on the grill in the morning and spend the afternoon on the lake, because the best way to smoke meat is "low and slow." The Memphis Grill will stop cooking and switch to warm mode when the meat reaches the desired internal temperature.

You will enjoy experimenting with different woods and different seasonings! You can purchase a variety of wood pellets, including cherry, maple, hickory, mesquite, apple, oak, and pecan. Each has its own characteristics, and over time, you will find your favorites.  We typically use a hardwood for our salmon. Pork is best with fruitwoods, and of course, there is nothing like mesquite with turkey or beef.  Once we started using the Memphis Grill, our traditional grill is used only for heating up hot dogs!

There is a wealth of information and many recipes available on the Memphis Grill website (www.memphisgrills.com), but to get you started, here are a couple of my favorites:

Salmon

If you like salmon, you will LOVE it smoked on the Memphis Grill. We load the hopper with wood pellets and set the temperature to 200 degrees. Simply brush the salmon with olive oil, season with your choice of seasonings (I use primarily salt and pepper, along with some lemon pepper and garlic salt), then let it smoke for 30 - 40 minutes, until it's flaky and light pink.

Pork

Pork shoulder (or brisket or turkey) can be smoked at 180 - 200 degrees for 12 - 16 hours. Season to taste. For pork, I spray with a little apple juice periodically to add flavor. Shorter smoking time is better for sliced pork. Longer smoking time is better for pulled pork.

Steak

The Memphis Grill can sear a steak better than the best steakhouse in town. We like to start with a thicker New York strip steak. Simply fire the grill up to 700 degrees, season the meat with your favorite seasonings, and put the steaks on the grill for only 4 minutes per side for medium rare. (Adjust cooking time as desired.)

Dessert

Because the Memphis Grill is also a convection oven, you can convection bake a sheet of chocolate chip cookies for dessert! The recirculating fans provide even heat, so the cookies will come out nice and golden brown. They will not be smoky, because the cook time is so short.

The more you use your Memphis Grill, the better you will get at smoking. But you can't go wrong with this grill, and you need NOT be afraid of trying! This is a very high quality product that will give you years of service. It is available as a freestanding grill or can be built into an outdoor kitchen. And it makes a great Father's Day gift!

The Latest and Greatest
A remarkable new material for cabinetry and countertops has arrived!   If you're not a scientist or engineer you might not know about nanotechnology --a process applied to a super new innovative material introduced in Italy.  NanoTech Matte has made it's way to the U.S.  We can't wait to show you the samples.

NanoTech Matte stands out with an extremely matte surface, very low light reflectivity and its ability to heal micro-scratches. It is very resistance to scratches, abrasion, impact, heat and mold. Worth mentioning is also its enhanced anti-bacterial properties, and that it is easy to clean and it doesn't show fingerprints!

STYLING TIPS:

COCKTAIL TABLES - Think sculptural.  Use decorative objects such as a beautiful bowl, plate or even a stack of boxes.

BOOKCASES - Mix up the book placement.  Try a mix of vertical and horizontal arrangements and even arranging by color to create an organized, color-block effect.

INCORPORATE ORGANIC - Bring in materials such as rocks, seashells, coral or air plants to add interest to your scheme.

WALLS - Artwork Artwork Artwork - Add color and clean lines to your scheme with framed or canvas artwork.  You can either prop small pieces on the shelves or hang larger pieces on the shelves for an English library look.  It defines the real you.
