The owners of Vita Sana Olive Oil Company, Charles and Merry Jane Walsh, are excited to announce that Jedediah (Jed) Beadle just joined the Vita Sana Olive Oil Team as the Rapid City, SD, Store Manager!

Jed grew up in the Black Hills where he became strongly conscious and committed to a healthy living and associated life style. After years of work in and around local food markets in Rapid City, Jed traveled abroad immersing himself in other cultures, while being introduced to other foods not grown in South Dakota. Jed's travels resulted in his gaining artisan-level experience farming in New England, Indiana, California, Costa Rica, Italy, France, Chile, Spain Portugal and Mexico. This included working two olive oil farms in Italy and Spain. After almost two years of travel, Jed returned to Rapid City where he plans to continue his organic gardening and distributing quality food to those in need in his community. Truffled Deviled Eggs!

 

Ingredients

  • A dozen unshelled hard boiled eggs, room temp
  • 2 Tbsp Mayonnaise
  • 2 Tbsp sour cream
  • 2 Tbsp Truffle Oil (white or black) available at Vita Sana
  • 1/4 tsp salt
  • Black Lava Salt (available at Vita Sana), Black pepper & chives for garnish

Instructions

  1. Cut egg in half lengthwise and remove yolk into a small mixing bowl.
  2. Mash the yolks until smooth & add mayonnaise, sour cream, truffle oil & salt until smooth. Season according to taste preferences. 
  3. Spoon or pipe with pastry bag mixture into egg halves.
  4. Top each egg with a sprinkle of black lava salt, pepper & chives. Serve chilled.
