As Andy Williams' popular holiday recording says, "It's the MOST wonderful time of the year..." And that's true! We all need to take our hearts down Memory Lane, perhaps this year more than ever. Even a small amount of attention to the news in recent months can't help but have taken some of the joy of life from the most optimistic of us. And yet, every generation before us had its share of discouraging times; our parents and grandparents longed nostalgically for "the good old days" - just as many of us do!
    

Let's slow down a little, ignore social media, TV and the many distractions of the season long enough to open the treasure box stored in the attic of our memories. Make time to reflect on childhood family gatherings and special traditions. Hear the music and the laughter; let the magic of your happiest memories bring you deep satisfaction. At the end of the day, it's not about the hustle and bustle, or how many parties we're invited to (or host), or racing around to get a mountain of shopping done. Contentment and peace often come in the quiet moments.

If ever our world needed peace - from Pole to Pole, blanketing all nations, cultures, and societies - it's NOW! There can never be enough darkness to extinguish the Light; but even a candle in a stadium pushes back the darkness. May we each be that Candle!

"Let There Be Peace on Earth and Let it Begin With Me"
Beyond AMAZING Hot  Crab Dip
Serve in a warm crusty bread bowl - Be the HIT of the party!  
 
Ingredients:
  • 11 ounces softened cream cheese
  • 1 small onion, finely chopped
  • 5 tablespoons mayonnaise
  • 2 (6 ounce) cans crab meat, drained and flaked

  • 1/8 teaspoon garlic powder

  • salt and pepper to taste

  • 1 (1 pound) loaf round, crusty Italian bread

  Directions: 
(Preheat oven to 350 degrees F.)
  1. In a medium bowl, combine the cream cheese, onion, mayonnaise, crab meat, garlic powder, salt and pepper. Spread mixture into a 1 quart baking dish. 
  2. Remove baked crab dip from the oven, and stir well. Spoon the mixture into the hollowed out loaf.
  3. Place bread bowl and chunks of bread on a medium baking sheet, and bake for an additional 10 minutes. Serve hot.
With all the holiday cooking around the corner, let's consider when it matters to buy "organic" produce
When and why should you go organic?
Such a small word means so many things! While "organic" is often viewed in a positive light, many people may not know what it means for a food to be organic. Nationally regulated by the U.S. Department of Agriculture, the organic seal takes a lot to earn! Individuals or companies who sell or label a product as organic when they know it does not meet USDA standards, can be fined up to $10,000 for each violation.
 
Organic crops (fruits, vegetables, nuts, seeds, herbs, spices, teas).
The USDA organic seal verifies that irradiation; sewage sludge, synthetic fertilizers, prohibited pesticides and genetically modified organisms were not used on crops. Not sure what those things are? You aren't alone.

Organic livestock (animals).  The USDA organic seal verifies that producers met animal health and welfare standards, did not use antibiotics or growth hormones, used 100 percent organic feed and provided animals with access to the outdoors.

The Dirty and the Clean...
There are certain fruits and vegetables known to have high pesticide levels; try to only buy
organic when choosing from the "Dirty" list. Support our local farmers and buy non-organic produce from the "Clean" list.
