Hey Everyone!! How was your week?? I had SOOO much fun!  Stroke & Stride was Wedensday night, Friday morning I ran a marathon around a track with my friend Wendy, and then Sunday I did a 4.8 mile open water swim and ended up 9 minutes faster than last year! BONUS!!!

EASY Vegan Meals...

SUPER HUMMUS

 

So I am sure there are some super easy ways to make your own hummus, but I am even too lazy for that. So what I have for you today is a recipe to SASS up your Hummus and make it into a meal. 

 

You can add fruits, spices, veggies, ANYTHING you want depending on your mood and then use the DIPPER of choice depending how healthy you want to be. I am experimenting with different concoctions now, but here is my current fave...

 

Spicy Mexican Style Hummus

 

Hummus (I love the one pictured, but if you don't like spicy stuff, get something else)

Cilantro (I like LOTS)

Avocado

Corn

Pico de Gallo

 

Mix it all together in a big bowl and dip either veggies (if you are watching your calories) or corn chips (way better). You can also spread it on a tortilla and roll it up like a burrito! Mmmm...maybe I'll try that next time!!!

Homework: Gratitude Journal...

 

When I was 13 years old I didn't like myself or my life. I'm sure most 13 year olds feel that way at some point, but I felt like I was alone and didn't see any light at the end of the tunnel.

 

My mom noticed and enrolled me in a class at her church called "I AM" with other sad teens. At first I thought it was cheesy. We had to go around the room each week and say one thing we loved about ourselves...BARF!! We also had to keep a journal and each night write 3 things that were good from that day. How awful right? It was hard at first but over time it got easier to see the good in myself and in my life. And the more good I found, the more good showed up.
