Hey Everyone!! How was your week??  Stroke & Stride was Thursday night and I got my best time ever! YAY! Saturday morning I did a half marathon and my goal was to PR. I wasn't even close, but gave it my all and that's ALWAYS all I can do!! Luckily all the old people stayed home and I still won my age group! BONUS! Other than that I did laundry and took naps. I am WILD like that ;)

EASY Vegan Meals...

TACO SALAD

 

I don't know about you but I grew up on Mexican Food and it is one of my faves. But it's not always condusive to "vegan" or "clean" for sure. 

 

Here is an AMAZING Taco Salad I created that is easy, clean, healthy, and FUN!!!

 

Salad Ingredietns...

 

Lettuce of your choice (the darker the healthier)

Pico De Gallo 

Bell Peppers

Garlic

Cilantro

Avocado, Guac, or last night I used Avocado Hummus

 

Optional Ingredients...

 

Corn Chips

Corn Tortilla

Flour Tortilla

 

1. Make your salad

2. Eat it as a salad OR use chips or tortillas to scoop it up or turn it in to a wrap or a burrito

Workout of the Week...BIKE!!

Each week I will feature a swim, bike, run, strength, core, or flexibility workout.

TIME TRIAL 

There is no better test of your inprovement on your bike and fitness level than a Time Trial (TT). 

Either find a route outside that has no (or as few as possible) stop lights, stop signs, traffic, wind, etc OR ride on an indoor bike (make sure you use the same settings, levels, etc for each TT).

Pick a distance you are able to do once a week or once a month to test your improvements.

Write down the time of day, how you are feeling, stress levels, and what you ate that day so you can replicate your subsequent TTs as closely as possible.

Record your time, perceived exertion, heart rate, etc after each one to compare date. I like spreadsheets :)

Counting Calories...

 

I had a friend ask me the other day about "counting calories" and I was shocked. I guess since I have been obsessed with counting calories since I was 12 years old, I assumed everyone knew the ins and outs of calories!!

 

Her questions made me realize not everyone understands calories, the part they play in our weight loss/gain, how easy it is to lose track of calories, and how to use calories as part of your daily health routine.
