Bresaola
 
Olli Salumeria Bresaola is air-dried beef made from the bottom round. This cut is salted and hand-rubbed with spice. Olli Salumeria makes artisanal slow-cured meats based on original 160-year-old family recipes that were handed down to 4th generation Italian Salumiere, Oliviero "Olli" Colmignoli. As for the hogs, they are pasture raised on family-owned sustainable farms.

Good salumi is directly affected by the quality of the pork, and Olli Salumeria goes to great lengths to obtain the best heritage-breed (Berkshire, Duroc and Mangalitsa) pigs available. The pigs are humanely pasture-raised on family farms (never confined to pens or crates), and are fed all-vegetarian feeds (antibiotic-free and never fed animal by-products). The pigs are grown to mature age and weight for increased flavor (about 8 months vs. industry standard 5-6 months). These farmer partners put a lot of care and attention into the way they raise their pigs, making an exceptional product for your table.

Intense, beefy, earthy--all describe this 1+ lb. aged wheel (2 per case online)with a reddish, washed rind and the typical pungent odor to match. Named for a nearby monastery, Mont St. Francis is a hearty, stinky, cheese, semi-hard and rich. We love it but it's not for the faint of heart! One of our customers has described it as "a cheese you would not want to eat on a first date, but maybe on the 2nd if the first one went well." Because it is extreme, it pairs well with bourbon or fruity, fortified wines and sweet condiments. Also excellent with bitter beers.

Noble Maple Syrup

 

The Noble brand of handcrafted wares is proud to bring you Noble Tonic 01: Tuthilltown Bourbon Barrel Matured Maple Syrup. Noble procures medium amber grade Maple syrup from heritage sugar shacks in the ancient maple orchards of Qu�bec. The syrup is then matured in Tuthilltown charred American oak barrels, with just a hint of raw Tuthilltown bourbon. This combination and process produces a distinct bourbon, maple and oak flavored syrup. Tuthilltown is New York's first whiskey distillery since the age of Prohibition. This small batch micro-distillery, using locally sourced heirloom corn, apples and grains, embodies the new American pioneering spirit of our age. Noble Handcrafted reflects this same spirit. Zorzalena Olives 
 

 When harvested, these olives are still in the middle of the maturation process, creating a product that is homogeneous in color, a beautiful deep olive green. One of the main characteristics of this variety is the strength and vigor of the olive tree, which for decades has been used to graft weaker varieties, taking advantage of the strong zorzale�a roots. Because of this process the zorzale�a olive trees began to disappear becoming scarce and underutilized. Most of the existing trees are found growing wild at road sides. The name zorzale�a originated from local wild birds "zorzales", that feed on the mature olives found in Western Andalucia.

Andouille Sausage

 

Andouille is a south Louisiana favorite for use in gumbos, red beans and rice, stews, pasta dishes, soups and jambalaya. Our andouille includes USDA pork, coarsely ground, seasoned, marinated, and stuffed in large sausage casing and hickory smoked to perfection. Our favorite snack is 1/4" sliced andouille covered with a sweet barbeque sauce. Just heat and serve with a tooth pick. Ces Bon!
