Here is my list of items I will be making for Saturday January 31st for the Mecklenburg County Market. Please call me (704-533-0073 Beverly McLaughlin) or reply to this email with your orders if you would like me to save you a quiche, casserole, salad, or a quart of my products. (I always make extras of the items on the menu, however items do sell out so, it's best to reserve an order to guarantee it will be there.) If you do not receive an email confirmation by Friday afternoon that I received your order please call me.
My menu changes weekly, I have over 270 items in my line of products special orders are available with advance notice. I can also cater your parties! My products are vegetarian and vegan. I only cook with olive oil and vegetable oil. I do not use processed foods, artificial coloring, artificial flavorings, or preservatives in my products, only whole foods. My products are prepared in a commercial kitchen. I am ServSafe Certified and my Health Department Inspection is 99. We recycle all paper, plastic, glass, and canned items and my packaging containers are now recyclable.

Hummus and Blue Cheese Dressing are packaged with fresh vegetables already prepped.  All you have to do is transfer to your own Super Bowl Platter. $18.95

Sun-Dried Tomato and Kalamata Olive Spread (Appetizer or sauce for pasta)
This is a delicious spread for garlic toasted rounds, I use this as an appetizer for most of my parties.  It's made with sun-dried tomatoes, kalamata olives, olive oil, Parmesan cheese, feta cheese, and garlic.  Sold in 1/2 pint containers.  Freezes well.   (Vegetarian, Gluten Free) 

 Vegetable Spread 
My vegetable spread can be used as a dip for chips or vegetables or as a spread for sandwiches.  Cream cheese, cucumbers, carrots, celery, red and green peppers, onions, salt and pepper.  $5.95  8oz. container  (Vegetarian and Gluten Free)
  
 Homemade Pimento Cheese   
This is my grandmother's recipe.  We love it!  We discovered the pimento cheese is excellent warmed up as a dip.  It's made with extra sharp cheddar, cream cheese, duke's mayonnaise and pimentos.  This is a spread or a dip and goes well with the soups.  Packaged in pint containers.

Roasted Root Vegetable Stew with Apple Cider Glaze
This is a hearty stew full of flavor.  Roasting the vegetables creates an extra depth of flavor.  Parsnips, Yukon potatoes, turnips, rutabagas, carrots, leeks, sweet potatoes, garlic, vegetable stock, apple cider, butter (only a little), and fresh herbs.  $9 / Qt. Serves 2 - 4

Roasted Cauliflower Soup
This 
soup is pureed also, it's rich and thick, the cauliflower is roasted with walnut oil.  It's a lovely soup that would go great as an appetizer at your table this weekend.  $9 / Qt. (Vegetarian and Gluten Free)

Spiced Red Lentil Soup (Yummy!!)

I love this soup, I could serve it everyday, it has become one of my favorites!  Red lentils, chopped tomatoes, garlic, serrano peppers, coconut milk, fresh cilantro, caramelized onions, olive oil, and spices. $9 / Qt.

Thai Butternut Squash Soup with Fresh Cilantro
Butternut squash, caramelized onions, garlic, coconut milk, vegetable stock, fresh cilantro and salt.  This soup goes well as a side with the Tofu,  Lentil Salad with Fruited Bulgar or Edamame Salad.  Serves 2 - 4 $9 / Qt. (Vegan, Gluten Free)
 

 

Tomato and Blue Cheese Soup with Fresh Organic Basil (Made with local tomatoes)
Whole tomatoes, Blue Cheese, onions, celery, carrots, fresh basil, cream, vegetable broth and a blend of spices.  This soup is pureed and makes a wonderful appetizer.   Serves 2 - 4 / $9 Qt  (Vegetarian, Gluten Free)

Wild Rice Chowder
The combination of celery, celery root and wild rice is very beneficial, mushrooms are also considered an excellent partner for this grain.  Wild rice, onion, leeks, carrots, potato, celery, celery root, fennel, butter, cream, (very little) mushrooms, salt and pepper.  $9 / Qt   (Vegetarian, Gluten Free)

Granny's Vegetable Soup 
This soup is obviously one of my Grandmother's recipes.  I make it like she did, just without the meat.  This soup is very thick, you can add your own beef stock or chicken to my recipe. Zucchini, squash, carrots, onions, celery, potatoes, navy beans, garbanzo beans, black-eyed peas, Lima beans, corn, sweet peas, cannelli beans, pasta, tomato sauce, vegetable stock, salt, pepper and spices. Serve with a fresh organic salad, Mac and Cheese Casserole, or Pimento Cheese Sandwiches.  $9.25 / Qt. Asparagus and Goat Cheese Quiche with Roasted Tomatoes

Mediterranean Vegetable Casserole 
This is basically a crustless quiche, packaged in my casserole pans.  Spinach, caramelized onions, mushrooms, artichoke hearts, kalamata olives, sundried tomatoes, mozzeralla, Parmesan, feta and free range eggs, evaporated milk.  Serves 4  $11.95 (Vegetarian, Gluten Free)

Tomato Basil Pie (Made with Fresh Basil)
Layered tomatoes, feta cheese, Parmesan cheese, fresh basil, caramelized onions, olive oil, salt and pepper in a pastry pie crust. This pie goes well with everything, good for lunch, dinner or parties!

Lentil Salad with Fruited Bulgar 

Some of my customers tell me they eat this for breakfast with yogurt.  Low in carbs.  Combination of orange lentils, Bulgar, dried cranberries, dried Turkish apricots, carrots, fresh parsley, fresh mint, fresh squeezed lemon juice, olive oil, pine nuts and pumpkin seeds.  (no garlic, no onions)  $3.99   (Vegan)

 I am always trying to find a veggie burger that my children will eat.  This one was a hit.  I am offering it to you in a pint container so you can make your burgers to the desired size.  Brown rice, chickpeas, onions, red beans, carrots, almonds, sunflower seeds, wheat free soy sauce, garlic and spices.  $7.99 lb.
