Here is my list of items I will be making for Saturday January 24th for the Mecklenburg County Market. Please call me (704-533-0073 Beverly McLaughlin) or reply to this email with your orders if you would like me to save you a quiche, casserole, salad, or a quart of my products. (I always make extras of the items on the menu, however items do sell out so, it's best to reserve an order to guarantee it will be there.) If you do not receive an email confirmation by Friday afternoon that I received your order please call me.
My menu changes weekly, I have over 270 items in my line of products special orders are available with advance notice. I can also cater your parties! My products are vegetarian and vegan. I only cook with olive oil and vegetable oil. I do not use processed foods, artificial coloring, artificial flavorings, or preservatives in my products, only whole foods. My products are prepared in a commercial kitchen. I am ServSafe Certified and my Health Department Inspection is 99. We recycle all paper, plastic, glass, and canned items and my packaging containers are now recyclable.

 Soups

Ash-e-joh (Persian Barley Soup) (In case you missed it last week)
This Persian Barley soup is a little more full featured than those in a Persian restaurant.  Onions, garbanzo beans, pearl barley, kidney beans, lentils, long grain rice, parsley, cilantro, scallions, fresh dill, fresh spinach, and lemon juice.  Like many Persian stews, it is positively stuffed full of greens and herbs, giving it a bright and lively flavor.  Serves 2 - 4  $9 / Qt.

Asparagus Bisque  
 Local asparagus, onions, celery, carrots, potatoes, cream, vegetable broth and a blend of spices.  This soup is pureed and makes a wonderful appetizer.  Goes well with the Pasta, Lentil Salad with Fruited Bulgar, or pimento cheese sandwiches.  Serves 2 - 4 / $9 Qt

Black Bean Soup 
Black Beans, sun dried tomatoes, fresh tomatoes, fresh cilantro, onions, garlic, spices.  This soup has a kick to it! Feeds 2 - 4 people $9 / Quart. Freezes well. This soup goes well with an organic salad from our Market or the Mac and Cheese Casserole. Garnish with a dollop of sour cream.

Black Eyed Pea and Collard Green Soup

Buddha's Diet Delight
I love this soup!  It is a meal in a bowl.  It's probably one of the healthiest soups I make.  Sugar peas, and/or asparagus, snow peas, mushrooms, carrots,  baby corn, tofu, onions, scallions, rice noodles, vegetable broth, (no garlic).  $9/ Qt. Serves 2 - 4

Cabbage Diet Soup (48 Calories Per Serving)
Many of you have requested I make a Cabbage Soup I have altered this recipe from the original Cabbage Soup recipe that was all the craze several years ago.  I have replaced green peppers with fresh fennel, a flavor I prefer.  I thought this would be a good soup for the start of spring.  Cabbage, onions, scallions, celery, fennel, chopped tomatoes, red pepper flakes, fresh parsley. $9 / Qt.

Potato, Leek and Artichoke Soup
This is a thick, rich, yummy soup.  It is pureed and similar to my  Vichyssoise Soup I make during the summer.  You can serve it hot, cold or room temperature.  Potatoes, leeks, artichoke hearts, butter, cream (very little), salt and pepper, (no garlic).  $9 / Qt. Serves 2 - 4 (Vegetarian, Gluten Free)   

Granny's Vegetable Soup 
This soup is obviously one of my Grandmother's recipes.  I make it like she did, just without the meat.  This soup is very thick, you can add your own beef stock or chicken to my recipe. Zucchini, squash, carrots, onions, celery, potatoes, navy beans, garbanzo beans, black-eyed peas, Lima beans, corn, sweet peas, cannelli beans, pasta, tomato sauce, vegetable stock, salt, pepper and spices. Serve with a fresh organic salad, Mac and Cheese Casserole, or Pimento Cheese Sandwiches.  $9.25 / Qt. Gypsy Soup
This is a nice, light soup that is good served for lunch along side the Asparagus and Roasted Tomato Quiche.  Onions, sweet potatoes, garlic, celery, chickpeas, vegetable stock, tomatoes, and a combination of spices.  Serves 2  $9 / Qt.  (Vegan, Gluten Free)
Gluten Free Spreads / Appetizers / Dressings     
Sun-Dried Tomato and Kalamata Olive Spread (Appetizer or sauce for pasta)
This is a delicious spread for garlic toasted rounds, I use this as an appetizer for most of my parties.  It's made with sun-dried tomatoes, kalamata olives, olive oil, Parmesan cheese, feta cheese, and garlic.  Sold in 1/2 pint containers.  Freezes well.   (Vegetarian, Gluten Free) 

 Vegetable Spread 
My vegetable spread can be used as a dip for chips or vegetables or as a spread for sandwiches.  Cream cheese, cucumbers, carrots, celery, red and green peppers, onions, salt and pepper.  $5.95  8oz. container  (Vegetarian and Gluten Free)
  
 Homemade Pimento Cheese   
This is my grandmother's recipe.  We love it!  We discovered the pimento cheese is excellent warmed up as a dip.  It's made with extra sharp cheddar, cream cheese, duke's mayonnaise and pimentos.  This is a spread or a dip and goes well with the soups.  Packaged in pint containers.  
Quiches, Breakfast Casseroles, and Tomato Pies

Quiche 
Spinach, Mushroom, and Feta Quiche
Spinach, mushrooms, caramelized onions, eggs, cream, feta cheese and a blend of other cheeses in a deep dish pastry pie crust.  Serves 6-8 $14.95  Freezes well.  I would serve this with the Corn Chowder, Casseroles, or The Lentil Salad with Fruited Bulgar.  (Vegetarian)

Breakfast Casserole
Mediterranean Vegetable Casserole 
This is basically a crustless quiche, packaged in my casserole pans.  Spinach, caramelized onions, mushrooms, artichoke hearts, kalamata olives, sundried tomatoes, mozzeralla, Parmesan, feta and free range eggs, evaporated milk.  Serves 4  $11.95 (Vegetarian, Gluten Free)

Tomato Basil Pie (Made with Fresh Basil)
Layered tomatoes, feta cheese, Parmesan cheese, fresh basil, caramelized onions, olive oil, salt and pepper in a pastry pie crust. This pie goes well with everything, good for lunch, dinner or parties!

Vegan Stuffed Cabbage Rolls
My cabbage rolls are stuffed with my version of Mexican Picadillo (crushed tomatoes, texturized vegetable protein, Granny Smith apples, green olives, serrano peppers, garlic, raisens, bell peppers and spices.) all this stuffed inside a cabbage leaf with a light tomato sauce. Serves 2  $11.95 (Vegan and Gluten Free)

Organic quinoa, red peppers, caramelized onions and carrots, pumpkin seeds, parsley and roasted pine nuts. Serves 2 $11.95

Blue Cheese Mac and Cheese
This is a new twist on our  Mac and Cheese.  If you like Blue Cheese, then you will LOVE this casserole.  It's still made with all of our cheeses and topped with Blue Cheese. $11.95 (Vegetarian)

Three Bean and Butternut Squash Chili
