Healthy recipe of month to pack in your child's lunchbox for school.
- 5 x tomatoes, cored and quartered
- 1 large red bell pepper, seeded and quartered
- 3 medium yellow onion, peeled, quartered
- extra virgin olive oil
- 5 plump cloves of garlic, unpeeled
- fine grain real salt
- 2-3 cup homemade organic beef, vegetable or chicken stock (available at NourishMe)
- 1/4 tsp paprika
- Arrange the tomatoes, skin side down on one baking sheet.
- Coat peppers and onions with olive oil and put them on the other baking sheet along with the garlic, place the peppers skin side down.
- Give both sheets a light showering of salt, then bake until the tomatoes start to collapse and onions start to brown and caramelize, about 45 minutes.
- Turn the onions if they start getting overly dark on the bottom. Check on the garlic as well, once the cloves are golden and oozy inside, pull them from the oven.
- Peel the garlic, dump all of the roasted vegetables into a big, high-sided bowl, and puree with a hand blender with a food processor.
- Blend in a cup of the stock, and keep adding the rest 1/2 cup at a time until the soup is the desired consistency.
- Add the paprika and a bit more salt if needed. Adjust to your taste.

Excitotoxins

Excitotoxins kind of sound fun, don't they. Way more heady than a sip of matcha tea, these non-essential amino acids stimulate neurons to death. Excitotoxins are linked to neurotransmitters in the brain, and may play a critical role in the development of several disorders, including migraines, seizures, infections, abnormal development and certain endocrine disorders. Also excitotoxins may play a role in the development of neurodegenerative diseases such as ALS, Parkinson's disease, Alzheimer's disease, Huntington's disease, and olivopontocerebellar degeneration.
They are added to food, medicine, and other products. In particular, glutamate, aspartate, and cysteine are three amino acids that over excite our neurons. These are now added in large amounts to our food supply.
