Here is my list of items I will be making for Saturday April 18th for the Mecklenburg County Market. Please call me (704-533-0073 Beverly McLaughlin) or reply to this email with your orders if you would like me to save you a quiche, casserole, salad, or a quart of my products. (I always make extras of the items on the menu, however items do sell out so, it's best to reserve an order to guarantee it will be there.) If you do not receive an email confirmation by Friday afternoon that I received your order please call me.
My menu changes weekly, I have over 270 items in my line of products special orders are available with advance notice.  My products are vegetarian and vegan. I only cook with olive oil. I do not use processed foods, artificial coloring, artificial flavorings, or preservatives in my products, only whole foods. My products are prepared in a commercial kitchen. I am ServSafe Certified and my Health Department Inspection is 99. We recycle all paper, plastic, glass, and canned items and my packaging containers are now recyclable.

Biltmore Estate Dressing
We use this dressing for all our caterings. This is a rich and tangy dressing that goes well with our organic lettuce at the Market.  Caramelized onions, olive oil, a blend of vinegars, spicy mustard, brown sugar, garlic, fresh herbs, salt and pepper. $6.95 / 8oz.   (Vegan, GF)

Artichoke Dip
Artichokes, Cream Cheese, Parmesan cheese, Duke's Mayonnaise, dehydrated onions, garlic, spices. $5.95 (Vegetarian, Gluten Free)

 Vegetable Spread

 Homemade Pimento Cheese   
This is my grandmother's recipe.  We love it!  We discovered the pimento cheese is excellent warmed up as a dip.  It's made with extra sharp cheddar, cream cheese, duke's mayonnaise and pimentos.  This is a spread or a dip and goes well with the soups.  Packaged in pint containers.

Lemon Poppy Seed Muffins
Yummy breakfast muffins... Packaged 6 to a container. Fresh lemons, poppy seeds, flour, eggs, almond flavoring and love. $7.95 (Vegetarian)

Cranberry Buttermilk Biscuits

Vegan Dinner #1
My guy is an avid cyclist.  Every Saturday he rides 60 miles and this is his dinner creation the night before the big ride. We serve it over rice pasta so that it is gluten free.  Crushed tomatoes, kidney beans, onion, carrots, corn, spinach, sweet red peppers and fresh basil.  $9 / Qt.

Black Bean Soup 
Black Beans, sun dried tomatoes, fresh tomatoes, fresh cilantro, onions, garlic, spices.  This soup has a kick to it! Feeds 2 - 4 people $9 / Quart. Freezes well.  This soup goes well with an organic salad from our Market or the Mac and Cheese Casserole. Garnish with a dollop of sour cream.

Buddha's Diet Delight
I love this soup!  It is a meal in a bowl.  It's probably one of the healthiest soups I make.  Sugar peas, and/or asparagus, snow peas, mushrooms, carrots,  baby corn, tofu, onions, scallions, rice noodles, vegetable broth, (no garlic).  $9/ Qt. Serves 2 - 4  (Vegan, Gluten Free)

 

Cabbage Diet Soup (48 Calories Per Serving)
Many of you have requested I make a Cabbage Soup I  have altered this recipe from the original Cabbage Soup recipe that was all the craze several years ago.  I have replaced green peppers with fresh fennel, a flavor I prefer.  I thought this would be a good soup for the start of spring.  Cabbage, onions, scallions, celery, fennel, chopped tomatoes, red pepper flakes, fresh parsley. $9 / Qt.

Portabello Mushroom and Lentil Soup
This is one of my favorites!  It's a very earthy tasting soup, with lots of fresh herbs.  Portabello mushrooms, organic green lentils, caramelized onions, vegetable broth, crushed tomatoes, and fresh herbs.  (no garlic) $9 / Qt.  (Vegan and Gluten Free)

Potato, Leek and Artichoke Soup
This is a thick, rich, yummy soup.  It is pureed and similar to my  Vichyssoise Soup I make during the summer.  You can serve it hot, cold or room temperature.  Potatoes, leeks, artichoke hearts, butter, cream (very little), salt and pepper, (no garlic).  $9 / Qt. Serves 2 - 4  (Vegetarian, Gluten Free)

Local collards slow cooked and seasoned with 3 types of vinegar, olive oils, garlic, salt and pepper. (Vegan and Gluten Free) 
  Casseroles 

Lentil Walnut Loaf
This is a yummy nut loaf full of protein and fiber.  It cooks up to resemble a meat loaf but is not as dense.  Green lentils, roasted walnuts, onions, flax seed, almond meal, red and green peppers, GF oats, fresh herbs, almond milk, sunflower seeds. Serve with the Apple Chutney. $11.95 (Vegan, and Gluten Free)

Cauliflower Au Gratin
 I always like to serve this casserole, it's great anytime of the year. I think it is a yummy comfort food.  Cauliflower, Swiss and Cheddar cheese, Duke's Mayonnaise, sour cream, parsley, and spices.  $11.95  (Vegetarian, Gluten Free)

Vegan Stuffed Cabbage Rolls
My cabbage rolls are stuffed with my version of Mexican Picadillo (crushed tomatoes, texturized vegetable protein, Granny Smith apples, green olives, serrano peppers, garlic, raisins, bell peppers and spices.) all this stuffed inside a cabbage leaf with a light tomato sauce. Serves 2  $11.95

Blue Cheese Rigatoni with Spinach and Roasted Pine Nuts (Entree)
Fresh Spinach, fresh tomatoes, rigatoni, blue cheese, caramelized onion, and sour cream roasted pine nuts, serve warm. $11.95 / Casserole Pan.   Serves 2 - 3 as an entree, 4 as a side.    (Vegetarian)

VEGAN AND GLUTEN FREE Macaroni and Cheese Casserole       
I use Tinkyadia Pasta when I make my Gluten Free Mac and Cheese.  It is a brown rice pasta. I make my macaroni with cashew cream cheese (raw cashews, lemon juice, nutritional yeast and sea salt. Serves 4 - 6 $11.95.  Packaged in an oven-ready casserole pan.  Heat at 350 for 30 - 45 minutes. Goes well with the Salads and the Soups.  (Vegetarian, Gluten Free)

Organic Quinoa Stuffed Red Peppers
Perfect dish for a Springtime Dinner. Organic quinoa, red peppers, caramelized onions and carrots, pumpkin seeds, parsley and roasted pine nuts. Serves 2 $11.95  (Vegan and Gluten Free)
Vegan, Gluten Free Burger

Black Bean Burger Mix 
My black bean burgers are sold in a mix packaged in a pint container.  You can pat the burgers out to make the desired size.  Black beans, purple onions, green peppers, cilantro, serrano peppers, fresh lime juice.  Makes 4 burgers.  Roll in panko chips and fry 8 minutes on each side in a non stick skillet.  $7.99lb.  (Vegan and Gluten Free)
Lasagna Entree           

Spinach and Mushroom Lasagna (for two)
This lasagna is low in fat because it is made with cottage cheese instead of ricotta cheese.  Organic Spinach, carrots, mushrooms, homemade marinara sauce, fresh basil, pasta, cottage cheese, mozzarella cheese, and fresh garlic.  Freezes well.  $11.95 Microwavable container.  (Vegetarian)
       
Gluten Free is also available.  I use Tinkyadia brown rice pasta.

Asparagus and Goat Cheese Quiche with Roasted Tomatoes

Layered tomatoes, feta cheese, Parmesan cheese, fresh basil, caramelized onions, olive oil, salt and pepper in a pastry pie crust. This pie goes well with everything, good for lunch, dinner or parties!

Chimichurri Tofu
  Chimichurri is one of my favorite seasonings to use, I love the tangy flavor of the cilantro,  parsley and mixture of vinegars.  Organic tofu, organic brown rice, carrots, sweet red peppers, mushrooms, onions, cilantro, parsley vinegars, olive oil, garlic, .  Packaged in my 6 x 9 casserole pans.  $11.95 Serves 2   ( Vegan and Gluten free)

Spicy Roasted Sesame Tempeh Salad (In case you missed it)
I love this dish!  Roasted tempeh, carrots, parsley, cilantro, soy sauce, rice wine vinegar, sesame seeds and sesame oil. (Vegan and Gluten Free)

Tuscan Three Bean Salad
Full of protein, this salad goes well as a side, topping over lettuce, or garnished over your favorite meat dish. Kidney beans, black beans, garbanzo beans, Parmesan cheese, and feta cheese, vinegars, fresh basil, olive oil and spices. (Vegetarian, Gluten Free) 

Wildrice and Barley Salad
  This is one of my most elegnant salads and tastiest too.  Organic wild rice, pearl barley, garbanzo beans, cranberries, golden raisins, scallions, purple onions, a blend of vinegars, Dijon mustard, (no garlic).  $3.99 Packaged in 8oz. containers.  (Vegan)

Deviled Egg / Egg Salad
After much debate, we decided in my kitchen deviled egg and egg salad is exactly the same thing it depends on what you grew up calling it.  I make mine with free range eggs, green olives, mayonnaise, mustard, apple cider vinegar, salt, pepper, and spices.  Packaged in 1/2 pint containers.  $5.95.   (Vegetarian, Gluten Free)
