Parmigiano Reggiano   
 
Made from 100% raw cow's milk in the regions of Reggio-Emilia, Modena and Parma, Parmigiano is quite possibly Italy's most famous cheese. We source our Parmigiano directly from specific farms whose cheese exhibits the best flavor that we can find! Our cheese is always aged for a minimum of 24 months in order to obtain the most delicious and complex flavor profile possible. We only select the best quality. No shortcuts are taken to bring you the absolute best Reggiano available.

Traditional balsamic vinegar from Modena is made from cooked grape must matured by a long and slow vinegarization process through natural fermentation followed by progressive concentration by aging in a series of casks made from different types of wood.  

 

Boneless Prosciutto di Parma

 

Our producer has been making Prosciutto di Parma for 28 years, and they always work with premium quality legs which we painstakingly select by hand. The same people who formed the company so long ago continue to do so as they have handed down the craft from father to daughter. The majority of the employees have been with the company for a very long time, some even since inception, and this gives us an important advantage in ensuring optimum quality in the production, aging and consistency of our hams. Our goal ultimately is to ensure you have a sweet and tender Prosciutto. Unique in its type. Prosciutto di Parma should not be hard and dry.
Gordal Pitted Olive   
 
The name gordal means "the fat one" due to it's round shape and large size (over 6gr).  Due to its low oil content it is exclusively used for table olives.  It has a fine delicate flavor, similar to manzanilla, and a firm, meaty texture.  Losada uses a neutral brine which results in a balanced salt to bitterness ratio, so that you can really taste the flesh of the olive.
Cava Wine Vinegar     
  
 O-Med Cava vinegar is made of the classic trio of grape varieties for Cava making.  The mix produces a dry, delicate and fresh white vinegar that preserves the fruity bouquet characteristic of the wines used.
