Delice de Bourgone  
 
Delice de Bourgogne is a French classic triple cr?me cheese made by Fromagerie Lincet on the lines of other classics such as Brillat Savarin or Explorateur. It originated in the Burgundy region of France where the company factory is located.

The cheese is made by blending full fat cow's milk with cr?me fra?che to create an incredibly delicious soft cheese with a rich flavour and a smooth, melt-in-the-mouth texture. Unlike many simple triple cr?me cheeses, Delice de Bourgogne has a white, bloomy and pungent rind because of the Penicilium Candidum mold. The mushroomy aroma of thin rind adds a playful contrast to the rich, creamy, buttery and tangy notes of the interior. This high fat cheese pairs very well with Champagne or Ciders and Wheat Beers.



Guancialie  
   
Olli Salumeria? Guanciale is made from the jowl cut of Berkshire pork and is hand-trimmed and hand-rubbed with salt and spice. Its name is derived from guancia (Italian for 'cheek'). Guanciale is traditionally used in dishes like pasta all'amatriciana and spaghetti alla carbonara. It is a delicacy of central Italy, particularly Umbria and Lazio.

IP8 Vinegar by Minus 8 
 
IP8 Vinegar begins with beer made in the style of IPA (India Pale Ale).  A blend of aromatic and flavourful hops are used to enhance the hop characteristics in the vinegar.  Sweet, delicious juice from Minus 8 premium icewine grapes is blended in.  There is no oak aging.  IP8 is meant to be used fresh, like beer.  It is made in small batches for freshness.

 

San Simon DOP Cheese
 
 
Lovely caramel colored with a golden interior and tiny eyes, San Simon is a smoked cow's milk cheese from Galicia in the shape of a teardrop. The subtle smoked flavor comes from aging the cheese on birch wood. The distinct smoke flavor permeates the moist, malleable paste that finishes creamy and luscious. Only four producers make the cheese; this one is artisanal.
