"Be Kind and Find"... the Empty Tote Stack:
We'd like to take a minute to thank our members for taking a minute to find the stack of empty CSA totes. Like Grandma used to say, "A place for everything and everything in its place".

Chicken and Egg Shares:
Thank you for always consulting the list before taking items, especially chickens and eggs.

Community Support: If you are sending your spouse or a friend to pick up the box they need to know what you know.  This prevents mishaps at the pick up site. Your CSA community will thank you for taking the time to care.

Dirt on the Farm:
Modern Farm "wife" cooking

Although, I am not a wife and my work is much different from the classic farm wife, I thought I would share some of the cooking tactics that I use to create our nightly meals here at the farm. The food that I have access to and the time that I have to use it are not always in what I think of as proper alignment.  If I could spend everyday, all day, in the kitchen, I would probably still have food projects on my wish list.  I have run myself ragged with ambitions of never needing a grocery store again. Now days though, I try to be realistic, and keep it simple and sweet (or in most cases, savory).

Ode to Cabbage:
Cabbage how I love thee; all of your many varieties, full of nutrition, flavor, and beauty.  My heart flutters when I see the many ways to use you.  Roasted (with onions and garlic flavors and my favorite spice mix or BACON), added to soups, stir-fry, fried rice, foil packs on the grill, and ohh my all time favorite... fermented! Scallions...or Green Onions?

Scallions
Scallions, or green onions, feature long, slender stalks and a mild onion taste.  Scallions/green onions are different from spring onions in that spring onions have small bulbs at the base of the plant, so they're a step between the very young scallion and the fully mature onion. The flavor profile of scallions is light enough that they can be used raw or cooked in dishes like salads, stir fries, pastas, soups, fried rice, etc. Keep in mind that this is a member of the allium family, so use
Spring Onions
caution when preparing as the compound allyl sulphide is released, which mixes with water in the air to form sulfuric acid in your eyes (and that's why we cry when cutting onions)
. To store your scallions, place them ends down in a cup with a quarter- to a half-inch of water, cover loosely with plastic, and place in your fridge.
Check out this great article from The Kitchn about 5 ways to use your bunch of scallions this week.
