Gag is one of the most abundant groupers in the Southeast and is harvested in U.S. waters from North Carolina to the Gulf of Mexico. Grouper has a mild but distinct flavor, somewhere between bass and halibut. Once the skin is removed from the fish, it's hard to tell red grouper and gag apart, but gag has firmer meat when it's fresh. The raw meat of both is white and lean. Kingklip is known for its distinct look with a very elongated body, tapering to a point at the tail. This is one of South America's finest eating fish and considerable numbers are trawled off the coast. It is also becoming a more common catch on bottom set long lines. How to prepare it? The fish works well in soup and stews because the dense meat holds together. The meat's density also means that it takes longer to cook than other types of whitefish. Fillets lend themselves to almost any cooking method such as baked, broiled, poached, fried, grilled or sauteed. Expect a mild, sweet flavor with a tender texture and large flake.

Copper River Sockeyes are now in full swing and we are seeing a decrease in price. Although the Copper River Sockeyes will be around for a while, it is the last week before other rivers start to open such as Bristol Bay. Good news for the industry, experts are predicting a record year for Sockeye Salmon! The kings are still somewhat short on supply and extremely high in price, however it will only get better from here. Catch will begin to increase and prices will start to decline. We will keep you updated as we receive more information on the wild salmon season.

FRESH UPDATE
CHILEAN SALMON: Negations on the Customs Strike in Chile continued last night with an expected announcement to come out today at 12. Unfortunately, there was no resolution to the strike. They are saying negotiations are intensifying so situations are looking up. As of right now, we are taking the salmon issue day to day.The void of the Chilean fish has caused a huge vacuum. Basically everybody including the end users held out to the last minute before making any decisions and the market hasn't been able to catch up and won't this week. There will be some time before we have Chilean Salmon back in house as it will time to process the fish and have it shipped. No Chilean Fish will arrive until Wed 6/3 IF things get resolved in the next day or so. We currently have Scottish and Norwegian in house, however supplies will be tight.
OCTOPUS: Octopus is a hot trend in seafood and we have several options for you. These range from Baby 16/20 count octopus, Spanish whole Frozen Octopus that are 4-6lb each and we have fully steamed Spanish octopus tentacle only that is ready to serve.
SHELLFISH: Shellfish remains a strong value with our mussel programs, clams, fresh clam strips, chopped clams, iqf oysters, fresh oysters and more
SOFTSHELL CRABS: The softshell crab season is well underway! The catch has been very good the last couple of weeks and should not change as long as the weather stays consistent.
WILD SALMON: The wild salmon season is starting to pick up with some great variety in house. We have Copper River Kings and Sockeyes, as well as Columbia River King Salmon.
