Noble Tonic 03 - Maple Matured Sherry Bourbon Oak Vinegar     
 
The Noble brand of handcrafted wares is proud to bring you Noble Tonic 03: Maple Matured Sherry Bourbon Oak Vinegar. Noble Tonic 03 is made using Spanish sherry vinegar matured in Tuthilltown single grain bourbon barrels. These are the same barrels Noble uses to age the 100% pure amber grade maple syrup found in Noble Tonic 01. Noble Tonic 03 maintains a 6% acidity and has a truly unique flavor profile. You will find this custom crafted vinegar versatile and nuanced, with hints of maple, bourbon, oak and of course the nutty rich flavor of sherry.

Bonito Flakes

 

 Although bonito is one of the most important fish in Japanese cuisine, it is rarely eaten as the entre of a meal. Instead, the dark, oily fish is carefully dried and shaved into very fine, intensely flavored flakes known as katsobushi. These salty flakes are combined with kombu seaweed to make dashi, the base stock for most Japanese soups and broths. Dashi is present in so many Japanese foods that the cuisine would hardly be the same without it. The strong, clean fish flavor of katsobushi makes it a wonderful seasoning for wakame seaweed salads, for seasoning chilled tofu, and for sprinkling over steamed or sauted vegetable

Bresaola      
  
 Olli Salumeria Bresaola is air-dried beef made from the bottom round. This cut is salted and hand-rubbed with spice. Olli Salumeria makes artisanal slow-cured meats based on original 160-year-old family recipes that were handed down to 4th generation Italian Salumiere, Oliviero "Olli" Colmignoli. As for the hogs, they are pasture raised on family-owned sustainable farms.
