 Pomegranate Winter Salad
Many studies show that the pomegranate is one of the most powerful, nutrient dense foods for overall good health.  Clinical findings clearly show a correlation between pomegranate compounds and their positive effect on cardiovascular, nervous system and bone health. 
 Enjoy the beautiful jewel-like red seeds in salads and deserts as well as a juicy, anytime snack.
  
Ingredients
  • 12 ounces fresh baby spinach
  • 12 dried figs, quartered
  • 1/2 cup dried cranberries
  • 1/2 cup sliced natural almonds
  • 1 pear, cored and thinly sliced
  • 1/4 cup pomegranate seeds
  • 2 Tbsp goat cheese, crumbled
  • 3 tablespoons pomegranate juice
  • 2 tablespoons red wine vinegar
  • 1 tablespoon raw honey
  • Sea salt and freshly ground black pepper
  • 1/4 cup extra virgin olive oil 
Directions
Salad: Place the spinach in a large salad bowl. Top with the figs, cranberries and almonds. Scatter on sliced pear right before serving. Sprinkle with the pomegranate seeds and goat cheese.

Dressing: Place pomegranate juice, vinegar, honey, 1/2 teaspoon salt and 1/8 teaspoon pepper in a small mixing bowl. While whisking, drizzle in the oil in a steady stream until blended. Serve the salad with the dressing on the side.
