Summer's not over yet! And Marcali Yacht is happy to remind you that the official end of summer isn't until September 21. Dockside Recipes
Grillin' with a Spicy BBQ Sauce
  

Ingredients:

  • 3 cups Ketchup
  • 1-7oz can chipotle peppers in adobo sauce (adjust amount based on your heat preference) seeds included.
  • 1/4 cup Dijon mustard
  • 3 cloves garlic
  • 1/4 to 1/2 cup apple cider vinegar (depending on taste)
  • 1/4 cup Brown Sugar
  • 2 Tbsp lemon pepper
  • 2 Tbsp butter
  • 1.5 Tbsp fresh ground black pepper
  • 1/4 can Coke. (diet if you prefer)

Directions:

 

Add all ingredients to blender ( you may de-seed the peppers to reduce heat), blend thoroughly and transfer to the stovetop. In a sauce pan, bring sauce to a simmer, reduce heat and simmer for at least 30 minutes stirring frequently. You may adjust the sweetness by adding additional vinegar if necessary.

Relax by the dock with a refreshing glass of Bobby Flay's
 Mango Ice Tea

Ingredients :

  •  1 quart freshly brewed tea, chilled
  • 2 cups fresh mango juice, chilled
  • 1/2- 1/2 cup simple sugar (equal parts sugar and water heated until sugar dissolves, cooled)
  • Ice cubes as needed
  • Fresh mango slices, for garnish
  • Mint springs, for garnish

Directions:

 

Add tea, mango juice, and simple syrup to a pitcher. Stir and refrigerate until chilled. Serve in glasses filled with ice and garnished with fresh mango slices and mint.
