 Kids In The Kitchen!

Onigiri are a popular snack in Japan. They are filled rice balls or triangles made with cooled sushi rice and decorated with scissor-cut nori shapes! They are both fun to make and eat!

1 cup sushi rice
2 tbs. unseasoned rice vinegar
1 tbs. sugar

1 tsp. salt

3-4 sheets nori
3-4 ears canned baby corn, drained & cut into 1/2 in. pieces

1/2 avocado diced

12 shelled edamame beans

1) Rinse & drain rice until water runs clear. Place in sauce pan w/ 1 1/2 cups water, bring to a boil. Cover, reduce heat to medium-low, simmer 12 mins or until all liquid is absorbed. Remove from heat. Let stand 1 min.
2) Whisk together rice vinegar, sugar, & salt in bowl. Add hot rice to bowl & mix w/ spatula. Spread on baking sheet. Let cool 5 mins.

3) Cut nori into eyes, noses, arms, ears, hair, whiskers, hats, etc.

4) Place square of plastic wrap over small bowl. Scoop 1/4 cup rice into center of wrap. Press in center w/ thumb, & fill indentation with baby corn, avocado cube, & 2 edamame beans. Cover with small plug of rice. Pull up sides of plastic wrap. Twist & squeeze to make tight, smooth ball. Unwrap & transfer to plate.

5) Decorate onigiri with nori, using drops of water as glue.

Imagination Library Early Learning!

Last month's book for age 4:

Little Monkey Lost
 Written by: Keith DuQuette

Extend your child's learning with the Five Areas of Child Development and Alaska's Early Learning Guidelines:

(1) Physical Health, Well-Being, & Movement Skills

(2) Social & Emotional Development

(3) Approaches to Learning

(4) Thinking Abilities & General Knowledge

(5) Communication, Language, & Literacy!

Movement: Take your child to the local rock-climbing gym, The Rock Dump, and watch them climb like monkeys!
Social emotional: Point out the feelings described in the book and talk about the way the monkey looks on that page. What does it mean to feel the emotions he is feeling? Talk about the times you or your child might feel that way.
Take a walk outside or down a nature path: Then look at the plants in the book; Ask, "How are these different from what we see in Alaska?"
Create: Have your child create their own jungle using paper, toys, anything!
Communicate: Talk about other places where animals live besides jungles (water, tundra). What types of animals live in Alaska and where?
